They're SO easy and SO quick! These grilled peaches with vanilla ice cream are my go to summer dessert because they take less than 30 minutes to make and can be whipped up super last minute. You don't even have to heat up the grill if you don't want to! Just grab a grill pan and heat up the stove real quick. Plus, they're super customizable. Scroll down to find out more!
What To Serve With Them
These grilled peaches with vanilla ice cream are not complete without an abundance of toppings:
- A big scoop of vanilla ice cream - It even says so in the title 🤣. But you don't have to use just vanilla! Head to the FAQs for other ice cream ideas.
- Chopped pistachios - Roasted and lightly salted are my fave. Not a fan of pistachios? Other nuts like pecans or walnuts are a great substitution.
- A caramel sauce drizzle - I like to use my salted caramel recipe here but you can use regular caramel (and it can totally be store bought 👍🏻). A drizzle of honey would also be delicious!
- Fresh mint leaves - I grabbed some from my garden! Adds just the right amount of summer herb flavor.
- A pinch of finishing salt or sea salt flakes for extra yums.
Tips for Perfectly Halved Peaches
Here are a few tricks to ensure you get the best halved peaches every time!
- Type of peach: Choose firm, ripe, fresh peaches for grilling. Freestone peaches work best for easy pit removal! You can still use clingstone peaches but you'll need to do a little extra work to get that pit out.
- Ripeness factor: Look for peaches that give slightly when gently pressed. Avoid peaches that are too soft or too hard.
- Where to slice: Cut along the seam of the peach from stem to end, then twist the halves apart.
- Removing the pit: If the pit is still stuck in one half, use a sharp knife to cut around the pit and then pop it out with a spoon.

Ingredients
- 2 large, ripe peaches - I used freestone peaches but clingstone will also work!
- 2 tablespoons extra virgin olive oil, for brushing
- Store bought or homemade vanilla ice cream
- Store bought or homemade caramel sauce, for drizzling*
- Fresh mint, roughly minced
- Roasted pistachios, roughly chopped
- Finishing salt
Instructions
- Halve and pit the peaches: Cut along the seam of each peach from stem to end, then twist the halves apart. If the pit is still stuck in one half after twisting the peach apart, use a sharp knife to cut around the pit and then pop it out with a spoon.
- Preheat a grill or heat a grill pan over medium high heat. While heating, lightly brush the top of each peach half with a little olive oil.
- Place peach halves face down on the grill and cook 4 to 5 minutes until grill marks have formed and are slightly softened. Flip and repeat, cooking for 3 to 4 minutes. Remove from heat.
- Once cool enough to handle (but still warm!) plate peaches as desired. Top each one with a scoop of vanilla ice cream and drizzle with the caramel sauce. Sprinkle with pistachios, fresh mint, and a pinch of finishing salt if using. Enjoy immediately!

I like to use my homemade salted caramel sauce but regular caramel sauce is also delicious!
