Somehow, summer is almost upon us. Though it's getting steadily warmer, it is still wonderfully rainy here so I'm able to keep enjoying these stormy days for a little while longer! Now even though you all know how I feel about summer (if you don't, it's, erhm, decidedly not my favorite season), that doesn't mean I don't love that warm weather food! But what to do when it rains and a campfire isn't an option? Introducing salted caramel oven baked s'mores!
TBH, in the past I haven't been the biggest fan of S'mores 😬. I always found them to be tooth-achingly sweet! Of course when I was a kid they were the best dessert ever, but it's just too much now. So. What to do?
Two miraculous things. Let us discuss.
One: Use both milk chocolate AND dark chocolate. Definitely helps cut the sweetness while also deepening the flavor!
Two: The addition of a salted caramel drizzle gives you extra yums and tones down the sweetness just at ridge.

Salted Caramel Oven Baked S'mores
- Total Time: 20 minutes

Description
Ooey, gooey mixed chocolate S'mores baked up on a sheet pan, no campfire needed! Drizzled with a homemade salted caramel sauce for extra yums.
Ingredients
For the S'mores
- 16 Graham Crackers, halved
- 2 4-ounce dark chocolate bars, broken into equal-ish portions (I used Theo's 70% cacao baking chocolate)
- 2 4-ounce milk chocolate bars, broken into equal-ish portions (I used Hershey's milk chocolate bars)
- 16 large Marshmallows
For the Salted Caramel Sauce
- 1 cup white sugar
- 6 tablespoons unsalted butter
- ½ cup heavy whipping cream
- ½ teaspoon vanilla extract
- ½ tablespoon coarse salt
Instructions
Make the Salted Caramel Sauce
- Wipe a heavy bottomed medium sized sauce pot clean of all impurities (bits of dust, etc.). Add white sugar in an even layer and cook over medium heat, stirring frequently with a heat resistant spoon while it melts.
- When the sugar is completely caramelized, quickly whisk in the butter until completely dissolved. Be careful as it will bubble up!
- Remove from heat and pour in the cream, quickly whisking until smooth. Again, be careful as it will bubble up.
- Add vanilla extract, and salt. Whisk together until smooth. Set aside in a warm place. Reheat as needed.
Bake the S'mores
- Preheat oven to 400˚F. Place graham cracker halves on a sheet pan. Place an equal amount of dark and milk chocolate on half of them and a marshmallow each on the remaining halves.
- Bake until marshmallows are golden and chocolate pieces are somewhat melted, about 4-5 minutes.
- Remove from heat. Drizzle with warm salted caramel sauce. Top each graham cracker marshmallow half with a melted chocolate graham cracker half. Press down gently to create the classic S'more sandwich. Enjoy warm!
