What You'll Need
I rarely include an equipment section in my recipe posts (except for in the actual recipe card at the end) but this one does require something specific. Sure, you'll need a couple mixing spoons, and a standing mixer helps. Oh plus a bread pan. But definitely make sure you have a grater! Why? For shredding the apples of course!
Why Shred The Apples
I know I know. Annoying right? But I promise you there's a good reason for it! By shredding the apples instead of simply chopping or dicing them, you're able to distribute their natural juiciness more evenly throughout the bread batter. This not only adds moisture but also intensifies the apple flavor in each bite.

Freezing and Storage
For Storage: Let your spiced currant apple bread cool completely. Then place in an airtight container or wrap in plastic wrap. Store at room temperature for up to 2 days, or on in the refrigerator for up to a week.
For Freezing: Once your loaf has completely cooled, tightly wrap it in plastic wrap. This will help ensure that no moisture can get in, which could lead to freezer burn. After wrapping in plastic wrap, add an extra layer of protection by wrapping the loaf in aluminum foil. This double layer of wrapping will further safeguard against freezer burn and preserve the bread's flavor and texture. Once your loaf is securely wrapped, it's ready for the freezer. You can store the bread in the freezer for up to three months

Spiced Currant Apple Bread

Ingredients
For the Apples
- 1 lb apples, peeled and cored (will make about 2 cups shredded)
- ½ cup golden brown sugar, packed
- ¼ cup granulated sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
For the Bread
- 1 ½ cups unbleached, all purpose flour
- ½ teaspoon sea salt
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- 2 teaspoon ground cinnamon
- ¼ teaspoon ground allspice
- ¼ teaspoon ground nutmeg
- ¼ cup vegetable or canola oil
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- ⅔ cups currants and raisins
- ⅓ cup walnuts, roughly chopped
Instructions
- Preheat oven to 350˚F. Grease a 9X5 inch loaf pan.
- Using the large side of a grater, shred the apples into a medium mixing bowl. Add the remaining ingredients for apples and stir to combine. Cover with a towel and let rest for 10 minutes.
- In a large mixing bowl, whisk together flour, salt, baking soda, baking powder, cinnamon, allspice, and nutmeg.
- In a standing mixer, beat together eggs, vanilla extract, and oil on a medium-low speed, until smooth and light in color (about 2-3 minutes).
- Stir in the apple mixture and beat on a medium low speed until combined.
- Add in the dry ingredients and stir until just combined.
- Gently fold in the currants, raisins, and walnuts.
- Pour the batter into the prepared loaf pan. Bake for 50 to 60 minutes until a toothpick inserted into the middle of the loaf comes out clean.
- Cool for 5 minutes. Turn loaf out onto a wire rack and cool for another 5 minutes.
