Description

This comfort-in-a-slice, super moist spiced currant apple bread is the essence of autumn with shredded apples for tons of flavor in every bite. Top with a little honey butter for the perfect taste of fall combo!

For the Apples

  • 1 lb apples, peeled and cored (will make about 2 cups shredded)
  • 1/2 cup golden brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger

For the Bread

  • 1 1/2 cups unbleached, all purpose flour
  • 1/2 teaspoon sea salt
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup vegetable or canola oil
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 2/3 cups currants and raisins
  • 1/3 cup walnuts, roughly chopped


Instructions

  1. Preheat oven to 350˚F. Grease a 9X5 inch loaf pan.
  2. Using the large side of a grater, shred the apples into a medium mixing bowl. Add the remaining ingredients for apples and stir to combine. Cover with a towel and let rest for 10 minutes.
  3. In a large mixing bowl, whisk together flour, salt, baking soda, baking powder, cinnamon, allspice, and nutmeg.
  4. In a standing mixer, beat together eggs, vanilla extract, and oil on a medium-low speed, until smooth and light in color (about 2-3 minutes).
  5. Stir in the apple mixture and beat on a medium low speed until combined. 
  6. Add in the dry ingredients and stir until just combined.
  7. Gently fold in the currants, raisins, and walnuts.
  8. Pour the batter into the prepared loaf pan. Bake for 50 to 60 minutes until a toothpick inserted into the middle of the loaf comes out clean.
  9. Cool for 5 minutes. Turn loaf out onto a wire rack and cool for another 5 minutes.
