Description

For the Apples
- 1 lb apples, peeled and cored (will make about 2 cups shredded)
- 1/2 cup golden brown sugar, packed
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
For the Bread
- 1 1/2 cups unbleached, all purpose flour
- 1/2 teaspoon sea salt
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1/4 cup vegetable or canola oil
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 2/3 cups currants and raisins
- 1/3 cup walnuts, roughly chopped
Instructions
- Preheat oven to 350˚F. Grease a 9X5 inch loaf pan.
- Using the large side of a grater, shred the apples into a medium mixing bowl. Add the remaining ingredients for apples and stir to combine. Cover with a towel and let rest for 10 minutes.
- In a large mixing bowl, whisk together flour, salt, baking soda, baking powder, cinnamon, allspice, and nutmeg.
- In a standing mixer, beat together eggs, vanilla extract, and oil on a medium-low speed, until smooth and light in color (about 2-3 minutes).
- Stir in the apple mixture and beat on a medium low speed until combined.
- Add in the dry ingredients and stir until just combined.
- Gently fold in the currants, raisins, and walnuts.
- Pour the batter into the prepared loaf pan. Bake for 50 to 60 minutes until a toothpick inserted into the middle of the loaf comes out clean.
- Cool for 5 minutes. Turn loaf out onto a wire rack and cool for another 5 minutes.
