Anyone else have an excessive amount of mint in their garden? Luckily, I planted mine in a raised garden bed so it can't overtake my entire yard, but it still manages to grow into a behemoth of a plant every summer. As much as I love a good mojito, I still can't keep up with the harvesting. Enter this quick and easy 5-minute mint pea dip!
Ingredients
Just 6 main items plus a dash of salt and you're ready to go! Check it:
- Fresh mint leaves - This recipe is a wonderful way to use up leftover mint from your garden. Make sure to pack that ½ cup full too, no skimping!
- Sweet peas - Grab a 12 ounce bag of frozen sweet peas, defrost them and drain off any excess liquid to avoid watering down the recipe.
- Tahini - The secret ingredient! Its creamy texture and nutty flavor adds a deep richness to this dip.
- Minced garlic - Just a touch! One clove should do.
- Lemon juice - While adding some liquid, the acidity of the lemon juice perfectly offsets the rich tahini and sweet flavor of the peas with a little tanginess.
- Extra virgin olive oil - I just can't have tahini without a little dab of olive oil!
- Coarse salt - Feel free to add more than listed in the recipe as desired. I even sprinkled a little finishing salt on top for extra yums.
Equipment
To make this mint pea dip, all you need is a food processor and a couple measuring spoons and cups. That's it! Dump all the ingredients into your food processor and pulse until smooth. Give it a taste test, adjust, and pulse again until smooth. Repeat until you're happy with the taste and voila!

Since it's so quick and easy to make, I have never frozen this dip to use later so I can't answer this one. We've also never had enough leftovers to freeze either!

- ½ cup fresh mint leaves, packed
- 12 ounces frozen peas, thawed and drained of excess water
- 2 tablespoons tahini
- 1 teaspoon minced garlic
- 2 ½ tablespoons lemon juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon coarse salt
Instructions
- Place all ingredients in a food processor. Blend until completely smooth.
- Taste test - add more salt as desired. If too thick, add a ¼ or ½ teaspoon of water at a time and blend until smooth.
- Serve with fresh veggies, crackers, or chips! Also delicious as a spread on sandwiches.
