Description

In just 5 minutes, whip up this easy, and deliciously creamy mint pea dip! Deceptively simple yet unique this spreadable snack combines the freshness of mint with the vibrant sweetness of peas and richness of tahini. Best of all, it's gluten-free, dairy-free, and vegan!


Ingredients

  • 1/2 cup fresh mint leaves, packed
  • 12 ounces frozen peas, thawed and drained of excess water
  • 2 tablespoons tahini
  • 1 teaspoon minced garlic
  • 2 1/2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon coarse salt


Instructions

  1. Place all ingredients in a food processor. Blend until completely smooth.
  2. Taste test - add more salt as desired. If too thick, add a 1/4 or 1/2 teaspoon of water at a time and blend until smooth.
  3. Serve with fresh veggies, crackers, or chips! Also delicious as a spread on sandwiches.
