Summer calls for some Classic Fresh Mint Mojitos. Before I moved to Seattle, our house in LA had a garden in the backyard that somehow, almost all year long, grew a massive surplus of mint. An absolutely ridiculous amount. Grew like a weed. SO, we thoughtwhat to do with all this fresh, fragrant mint?

Beverages! Even better, RUM beverages!
Classic Minty Mojitos; simple recipe, 10 minute prep time, and refreshingly delicious. Serve this up with some chips and guacamole, and your favorite tacos, and it's a done deal.
PS. Funny story about that mint. Once my mom asked my sister to go grab some from the backyard for mojito night...She came back with catnip (would've made for an interesting tasting beverage). Moral of the story: If it does't smell minty, it's not mint, so make sure you check! (or just don't ask my sis 🙂 )

Ingredients
- 6 oz light rum
- 8 mint sprigs + 4 mint sprigs for garnish
- 6 tablespoons lime juice
- 4 tablespoons sugar
- Club soda
- Crushed Ice
Instructions
- Blend the 8 mint sprigs, rum, sugar and lime juice in a blender. Strain out the mint leaves.
- Place ice in a cocktail shaker, and add in the blended mixture.
- Shake well and serve over ice in a high ball glass.
- Top off each glass with a splash of club soda.
- Garnish each with a slice of lime and a sprig of mint. Enjoy!

As refreshing as they are delicious. Crushed ice, although not necessary, should be used to make these adult beverages in my opinion. Props to the chef for putting fun drinks on the menu.
