Ahem. It's time...for a ONE PAN recipe! Introducing vegetarian sheet pan Mexican breakfast.
It's been a minute since I shared a sheet pan breakfast and you know how I LOVE a one pot/one pan recipe. This iteration focuses on Mexican flavors! Tons of spices, peppers, black beans, and garnishes found in Mexican cuisine alongside your standard egg and potato breakfast fare.
Secret: I was actually inspired by one of my hands down favorite one pan breakfasts, skillet baked huevos rancheros. It's pretty similar, but swap the skillet for an even easier sheet pan, add potatoes, peppers, and more spices. Oh and no water or salsa needed for cooking!
Just pico de Gallo for garnishing because obviously.
...It might not be obvious to you actually, but I tend to eat pico de Gallo and pretty much every savory breakfast ever and I'm not remotely sorry about it.
Hungry for some breakfast?? Or maybe planning breakfast for dinner? Either way, I got you covered. Recipe below!
