AH it's the weekend!!! And it's the 4th of July next week!!! ALL the fun things. Do you have your BBQ plans ready to go?? We always head over to the beach ourselves for the 4th, and I can't wait to soak up the sun and not work. Weather forecast is looking pretty decent so far, so keep your fingers crossed for us vitamin D deficient peeps up in Seattle. I know I could use a little sunshine...and maybe some coconut daiquiris 😎?
Of course, the 4th of July isn't complete without some kind of festive cocktail. To be honest, I have Hawaii on my mind because we BOOKED OUR HONEYMOON!!! Japan and a little Maui time. So I may have combined the two into one absolutely delicious cocktail. A little coconut here, some aptly colorful berries there...time to celebrate our independence day with some Coconut Daiquiris with Coconut Berry Ice Cubes!
Did you know how easy daiquiris are to make? Yet another thing I thought was super complicated when in reality was so simple and quick. Like 3 ingredients simple and quick.
Seriously, a classic daiquiri is just white rum, lime juice, and simple syrup, shaken over ice and poured into chilled cocktail glass...WHAT?! How have I not been making these every summer?? I do make some easy cranberry daiquiris every Thanksgiving, but those do have a tad more ingredients in them (perfect for Autumn but let's stick to the quick and easy stuff for summer - too hot for anything else!).
PS. Don't you love these gorgeous cocktail glasses?? I'm telling you, you've got to move to Anacortes because that's where all the awesome people live. Another friend of my mom's up there, Sherri and her husband Bill, gave Dan and I a huge surprise this past weekend. They handed us a a little gift bag that, upon opening, had three different styles of crystal wine glasses from her great aunt that were made in the 1940's. The 1940's!! And as if that wasn't already an amazing gift, I turned around and Bill was holding an ENTIRE BOX of them. A WHOLE BOX! We're so incredibly thankful for such a generous gift. As you can see, I have immediately put them to good use.
Back to the coconut daiquiris at hand. The perfect summer beverage snazzied up for the 4th of July! Ergo, coconut water berry ice cubes. Festive and ridiculously easy. Instead of plain ol' water, grab some coconut water and pour over your chosen berry selection in an ice cube tray, and freeze. 4 hours later, you've got 4th of July style cocktail garnishes that are not only festive but chill your delicious beverage.

Coconut Daiquiris with Coconut Berry Ice Cubes
- Total Time: 4 hours 5 minutes
- Yield: Serves 2 to 3 1x
Description
Enjoy tropical paradise in a glass with a splash of Malibu and festive frozen fruit ice cubes. The perfect refreshing cocktail for any July 4th get together!
Ingredients
For the Daiquiris
- 1 cup Malibu (caribbean rum with coconut liquor)
- ½ cup fresh lime juice
- ¼ cup simple syrup*
For the Ice Cubes
- Coconut water
- Assorted berries (I used thinly sliced strawberries, blueberries, raspberries, and pitted, halved cherries)
Instructions
- Make the ice cubes: Place 2-3 berries in each well of a small ice cube tray as desired. Pour coconut water over the berries and the fill the wells. Freeze at least 4 hours, or until frozen.
- Once cubes are frozen, make the daiquiris: Fill desired cocktail glasses with frozen berry ice cubes. Pour Malibu, lime juice, and simple syrup into a cocktail shaker. Shake well!
- Pour shaken daiquiris over the ice cubes. Drink up!
Notes
*Never made simple syrup before? No worries, it's easy! In a small sauce pan, heat equal parts water and white sugar until the sugar is dissolved. Then remove from heat, let cool, and then chill in the fridge! I usually make about 1 cup at a time, just to keep on hand; 1 cup water and 1 cup sugar. Keep in the fridge for up to a month!
