I made a 5 minute herb avocado green sauce with random stuff in my fridge and I eat with everything. E-V-E-R-Y-T-H-I-N-G.
Use it as a salad dressing? Check. Pasta sauce? Check. Drizzle on nachos? Check. Dip for veggies? Check.
Plus, it's dairy free and gluten free! I do use my go to toasted coconut almond milk to give it a little bit of a nutty flavor. Plus a substantial amount of lemon juice and a tinge of white wine vinegar to offset the creaminess of the avocado and any bitterness in the herbs.
