So it's Labor Day weekend and I was going to have aaaaalll this time to catch up on work, head outside and enjoy these gorgeous, sunny, non-smoky Seattle days...but instead I've been stuck inside with some weird, nasty flu that makes it impossible to eat and all I can do is sleep. Needless to say, I'm annoyed that my holiday weekend has been spent under a blanket with a box of tissues and the B-R-A-T diet. Bananas, rice, applesauce, and toast. It's been more than a smidge depressing. I do seem to finally be on the mend, but it's taken the ENTIRE long weekend. Oh well, what can you do? But now at least I can eat some pistachio mango granola!
I did manage to sneak in a quick walk around the neighborhood to rent a movie at our local video store (YEAH we still have one it's awesome). After being cooped up in the house for pretty much 4 days straight, the first thing I noticed when I went outside was how WONDERFUL everything smells! I walked by a lavender bush and it was like straight up perfume.
It was glorious. Being sick is the worst, but the silver lining is when you finally start to get better you realize all those fantastic things you take for granted in every day life. The littlest things, like breathing through your nose, eating anything other than applesauce, and feeling fresh air on your face.
Aaaanyway, better talk about this pistachio mango granola before I run out of steam! I absolutely love making homemade granola. I like to snack on it with milk, yogurt, or even plain! So I'm always looking for new, different ways to make granola. It's always super easy to switch it up because I use the same base recipe, changing out the add ons like chocolate or dried cherries for pistachios and dried mango.
I usually add brown sugar to my granola recipes, to add a little sweet, but I find this pistachio mango granola is sweet enough without it. Also, feel free to choose what oil you'd like to use to cook up a batch! Coconut oil smells fantastic in granola when baking in the oven, but you can use vegetable or canola oil as well.

Pistachio Mango Granola
- Total Time: 50 minutes
Description
Homemade granola recipe using a sheet pan, some dried mango, and some nutty pistachios. Sugar totally optional, it's sweet enough on its own!
Ingredients
- 3 cups gluten free old-fashioned rolled oats
- ½ cup brown sugar (optional)
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ¼ cup honey
- ¼ cup molasses
- ¼ cup coconut oil
- 1 cup pistachios, roughly chopped
- 6 slices dried mango, roughly chopped
Instructions
- Preheat oven to 300°F.
- In a large mixing bowl, stir together oats, brown sugar if using, cinnamon, nutmeg, and salt.
- Add vanilla extract, honey, molasses and coconut oil. Stir together until completely mixed.
- Spread the granola mixture onto a baking sheet.
- Bake for 35-40 minutes, stirring and rotating the pan after 20 minutes.
- Add pistachios and cook for 5 more minutes.
- Remove from oven, stir in mango and cool completely on a wire rack.
- Prep Time: 5 minutes
- Cook Time: 45 minutes
