Pistachio Mango Granola

Description

Homemade granola recipe using a sheet pan, some dried mango, and some nutty pistachios. Sugar totally optional, it's sweet enough on its own!


Ingredients

Units Scale
  • 3 cups gluten free old-fashioned rolled oats
  • 1/2 cup brown sugar (optional)
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup honey
  • 1/4 cup molasses
  • 1/4 cup coconut oil
  • 1 cup pistachios, roughly chopped
  • 6 slices dried mango, roughly chopped


Instructions

  1. Preheat oven to 300°F.
  2. In a large mixing bowl, stir together oats, brown sugar if using, cinnamon, nutmeg, and salt.
  3. Add vanilla extract, honey, molasses and coconut oil. Stir together until completely mixed.
  4. Spread the granola mixture onto a baking sheet.
  5. Bake for 35-40 minutes, stirring and rotating the pan after 20 minutes.
  6. Add pistachios and cook for 5 more minutes.
  7. Remove from oven, stir in mango and cool completely on a wire rack.
