So it seemed like summer was on it's way last week...but it literally stormed all day yesterday and it was my favorite. In the wake of my favorite rainy weather, I decided on a work out reprieve for the day, and instead took a 2 hour nap...I'm not even sorry. My voice has been an octave lower for two weeks now, completely disappearing on occasion so I think it was time for a break, meaning I snuggled on the couch scrolling through Pinterest recipes for summer inspiration. SO many good things coming your way guys! In fact, let's start now. Heat up that grill because we're makin' Spicy Garlic Lime Shrimp Pineapple Skewers!
Aaaanyway, let's talk about these Spicy Garlic Lime Shrimp Pineapple Skewers. Summer isn't complete without a good skewer. Last year, we had the Grilled Pineapple Beef Kabobs so I went a lighter route and decided on some marinated shrimp this season (but apparently pineapple is going to be a reoccurring thing).
Shrimp is so easy. Already peeled and deveined, a quick marinade, thread them on a skewer, cook for 3 minutes per side and DONE! Summer dinner is served. Gotta love 'em.
Also, by quick marinade I mean QUICK marinade! Only 30 minutes and they're ready to grill. Since the marinade has lime juice in it, it'll start to break down the shrimp if you leave it too long so this is definitely not an overnight kind of thing. WAY easier in my opinion, you don't have to remember get that marinade going the night before you wanna cook up some skewers!
Alriiiiight....I should probably catch up on the work out thing. So get that grill going and try out some Spicy Garlic Lime Shrimp Pineapple Skewers!
Spicy Garlic Lime Shrimp Pineapple Skewers
- Total Time: 36 mins
- Yield: About 8 skewers 1x
Ingredients
- 1 lb jumbo shrimp, peeled and deveined
- ½ fresh pineapple, cored, halved and thinly sliced
- ¼ cup olive oil
- 2 tablespoons lime juice
- 1 tablespoon fresh cilantro, minced
- 2 garlic cloves, minced
- ½ teaspoon coarse salt
- ¼ teaspoon black pepper
- ¼ teaspoon paprika
- ¼ teaspoon chili powder
- Pinch red chili pepper flakes
Instructions
- Preheat an outdoor grill.
- Make the marinade: In a large bowl or large ziplock bag, add shrimp, olive oil, lime juice, cilantro, garlic, salt, pepper, paprika, chili powder and pepper flakes. Toss until coated. Seal the bag/cover the bowl and chill for 30 minutes. While chilling, soak around 8 kabob skewers in water for 30 minutes.
- Remove shrimp from the marinade and shake off any excess liquid, reserving the marinade.
- Thread shrimp and pineapple onto skewers as desired.
- Place the skewers on the grill and brush with some of the reserved marinade. Cover and cook for 2-3 minutes. Flip the skewers over brush on the rest of the marinade. Cover and cook another 2-3 minutes, until shrimp is pink and cooked through (no longer opaque).
- Prep Time: 30 mins
- Cook Time: 6 mins

Made it and the family loved it. Also made a variation that used medium size shrimp w/o tails, chopped onions, and cooked with smaller slices of pineapple on a cast iron skillet on the grill--then tossed with brown rice cooked in chicken broth. I added all the marinade to cook it through and dress the rice.

I am going to try this tonight. My husband wanted spicy shrimp and my daughter wanted some with pineapple so hopefully it will work out well! What do you serve this with? I would say a baked potato but the pineapple makes me want to lean toward s rice

No. The lime will effect the shrimp if you marinate it over night.

want to do this for my luau party this weekend.... group of 30 so I have a lot to skewer... would it still work if I skewered in the morning and put the entire skewer into the marinade before grilling?

super quick & easy! I only had lemon and tripled the garlic. served it with wild rice and some spinach salad - great summer meal.
