Cocktail Monday. Good idea yeah? A lavender mint prosecco spritzer to start the week!
After I wrote my last post, I realized I completely forgot to ask about the holiday last weekend! How was your Easter?? Any delicious dishes? Dan and I drove up to Anacortes to visit the fam, it’s like a mini vacation every time I go there. SO much fun! We had delish bbq food and tried new beers at a festival in Bellingham, and of course made a stop at Aslan Brewery. I tried a ginger rye lager and omg. New fave beer and I’m a blue moon kind of person so that's saying a lot!
As for Easter dinner, we went the slow cooker pot roast route, with some skinny scalloped potatoes and some 10 minute lemon parmesan asparagus. Same recipe as my green beans but with a snazzy substitute!
We also may have had a couple of these lavender mint prosecco spritzer cocktails with our meal and over the course of the holiday weekend ????.
Perfect for spring, it’s so light and fresh this drink can go with pretty much any meal. The secret ingredient is a quick, homemade lavender simple syrup. Just a little lavender goes a long way! I used baking lavender buds and added them to a regular simple syrup, letting them infuse for a few minutes before straining and refrigerating. That’s it! And it’s just a slight hint of lavender to give you a taste of the season.
This lavender mint prosecco spritzer is most definitely my new fave drink this season. I wouldn't even mind swapping out the classic mimosa for one of these tasty drinks. Cocktail Monday here we come!

- Total Time: 15 minutes

Ingredients
- ½ cup white sugar
- ½ cup water
- ½ tablespoon baking lavender buds
- 1 bottle Prosecco, chilled
- ¼ cup vodka (4 ounces)
- 4-5 mint sprigs, plus extra as desired
- Zest of 1 lime and extra sugar for the rim
Instructions
- Make the Lavender Simple Syrup: In a small pot, heat sugar and water to a boil, stirring frequently. Reduce to a simmer for 5 minutes. Remove from heat and add lavender buds. Let steep for 5 minutes. Strain the syrup to remove the buds. Chill until completely cooled.
- To rim your glasses, pour a little white sugar and the lime zest onto a plate and spread to cover. Moisten the edge of each glass with a lime wedge and dip into the sugar plate.
- Pour prosecco into each glass over ice with 4-5 sprigs of fresh mint, filling the glasses half way.
- Stir in 1 ounce of vodka into each glass and between ½ to 1 tablespoon of the lavender simple syrup, depending on taste.
- Top off with more prosecco and more mint sprigs if desired. Serve immediately.
