To make this delicious side dish, you'll need just a few simple ingredients:
- White rice - Personally, I like to use jasmine rice.
- Water - Golden ratio is 1 part white rice to 1 ½ parts water.
- 1 lime - For freshly squeezed juice and the zest.
- Fresh cilantro - Can't have cilantro lime rice without it!
- Salt - Just a pinch to taste.

Tips and Tricks
For the perfect cilantro lime rice:
- Watch your rice and water amounts! One of the things I love about cooking vs baking is that there's a lot of flexibility; throw in a pinch of this, add a little of that, see how it turns out! However, rice is NOT one of those things. If you add too much water you get mushy rice. Ick. If you don't add enough, it's crunchy. Also ick. Ergo, measure your rice out, measure your water, and stick to the ratio.
- Make sure to fluff! Instead of a spoon, when the rice is done cooking use a fork or a rice paddle to fluff your rice. This helps to ensure there's no extra moisture lingering about in the pot and between the rice kernels.
- Fresh is best. Swapping out fresh cilantro for ground coriander doesn't work here.

Absolutely. You'll want to use the brown rice to water ratio of 2:1. So for this recipe, use 2 cups brown rice and 4 cups of water.
You can but they all work differently and I don't actually have one so I'm not sure about the rice to water ratio. My suggestion would be to make jasmine rice as you normally would in a rice cooker, then add the lime zest, juice, and cilantro afterwards.
Unfortunately no. That will add a lot more liquid to your rice. You can however swap the fresh lime juice for the bottled version.

Ingredients
- 2 cups jasmine rice
- 3 cups water
- 2 tablespoons lime zest
- 1 tablespoon freshly squeezed lime juice
- ¼ cup fresh cilantro, roughly chopped
- Coarse salt to taste
Instructions
- Rinse jasmine rice with water and drain fully.
- Add the rinsed rice into a large sauce pan. Pour in water and lime juice and bring to a boil. Once boiling, cover and reduce heat to low. Simmer for about 10 to 15 minutes, until rice is tender and water has been absorbed.
- Remove from heat, add lime zest, and cilantro. Fluff with a fork. Add salt to taste.
