Apologies to the non-meat eaters out there, but just look at this sear! And just wait until you hear about how easy it is. No grilling, no grease spattering, not even a stove top is necessary. Introducing, the easy tender London broil!
Spoiler alert: this steak recipe has nothing to do with London 🤷🏼♀️. I definitely assumed it did but after a little research it turns out the dish originates from Northern America, supposedly in Philadelphia. Who knew??
How to Make a Perfectly Tender London Broil
There are two main tricks to getting your London broil to be that delectable, melt in your mouth consistency.
The first one is the marinade. The longer you marinate your steak, the more tender it will be (but no more than 24 hours or you'll end up with mush)! I marinated mine for about 16 hours. Definitely do at least a minimum of 4 hours.
The second one is the time spent in the oven. This steak cooks on an extremely high heat and very close to the heat source, hence the name London "broil". Ergo, a meat thermometer is VERY handy for this recipe. I cooked my steak for about 7 minutes on the first side, flipped it, and about 6 minutes on the second side. This resulted in a perfectly rare to medium rare steak 🤩.

Description
This melt in your mouth steak recipe is marinated overnight and then broiled for just 15 minutes. The perfect, hands off steak dinner!
Ingredients
- 2 lbs London broil steak (top round steak, flank steak, topside steak)
- ½ cup extra virgin olive oil
- 2 tablespoons low sodium soy sauce
- ¼ cup Worcestershire sauce
- 2 tablespoons lemon juice
- 1 tablespoon dijon mustard
- 2 tablespoons balsamic vinegar
- 2 garlic cloves, minced
- 2 tablespoons Italian seasoning
- ½ teaspoon crushed red pepper flakes
- 1 teaspoon ground black pepper
- ½ teaspoon coarse salt
- Fresh herbs (rosemary, oregano, sage, chives, parsley, thyme), roughly chopped for serving
- Pat of butter for serving
Instructions
- Combine the steak and all the ingredients for the marinade in a gallon sized Ziploc bag. Shake vigorously to coat the meat.
- Chill in the fridge for at least 4 hours and up overnight (12-16 hours) to allow steak to tenderize.
- When ready to cook, grease a baking dish large enough to hold size of your steak. Turn broiler on high (450˚F-500˚F) for 10 minutes. While oven is heating, remove steak from marinade and place in the prepared baking dish.
- Broil steak for 5-7 minutes on each side (up to 8 minutes for an extra thick steak), until the center of steak reaches an internal temperature of 125˚F to 130˚F for medium rare.*
- Once steak reaches desired internal temperature, remove from heat and let rest for 10 minutes. Once rested, slice against the grain and sprinkle with desired fresh herbs and a pat of butter to serve.

Times will vary depending on your oven. Use a meat thermometer for accurate temperatures!
