There's been a lot of orange on the blog lately. As delicious as all of those orange, beige, etc. recipes might be, I think it's time to switch it up...and use ALL the colors of the rainbow in one bowl 🤣. Say hello to superfood berry salad with creamy lemon herb dressing!
I'm not joking about the rainbow situation. Grab a bag of your fave superfood greens mix, and toss with blackberries, blueberries, strawberries, pepitas, chopped up pistachios and blueberry goat cheese crumbles for a touch of purple.
See?? ALL the colors!
Also, I thought I might give the whole "green goddess" dressing thing a try. As you may have noticed, I'm definitely a vinaigrette person (specifically balsamic vinaigrette) so this creamy lemon herb dressing is a little different but ohmygod so good...
...And SO easy. Throw all the ingredients in a blender or food processor and pulse until smooth. Add salt and pepper to taste. That's it all there is to it 👍🏻.
So get your rainbow on and scroll down for the superfood berry salad recipe!
