Okay, I know grilling is what's up these days. However, here in our corner of the Pacific Northwest, we can't always rely on continued sunshine in the summer. Solution: the sheet pan! Introducing sheet pan lemon herb salmon with veggies.
I'm not a big fish person, especially salmon. You may have noticed that I haven't shared any salmon recipes before 😅. Dan requested one and voila! Sheet pan lemon herb salmon and veggies.
This dish is super quick, super easy, and SO delicious! It only takes 40 minutes and most of that is just baking in the oven.
Oh and that sauce on the salmon? Butter, garlic, lemon juice, Italian seasoning, salt and pepper 😍. Simple, buttery, zesty, herby, deliciousness.
Step 1: Toss veggies in olive oil, salt, and pepper on the pan and bake for 15 minutes.
Step 2: Add salmon to the pan and brush with that delectable butter mixture. Bake another 15-20 minutes until salmon is easily flaked with a fork.
Step 3: Garnish and chow down.

Sheet Pan Lemon Herb Salmon and Veggies

Description
A complete salmon dinner with green beans, carrots, and broccoli drizzled with a zesty garlic butter sauce. All done on a sheet pan in less than an hour!
Ingredients
For the Salmon
- 1 ½ to 2 lbs salmon filet
- 6 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon Italian seasoning
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
- Lemon slices, fresh parsley for garnish
For the Veggies
- 1 lb fresh green beans, ends trimmed
- ½ lb broccoli florettes
- 1 lb carrots, peeled
- 2 tablespoons extra virgin olive oil
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
Instructions
- Preheat oven to 400˚F. Grease a large rimmed baking pan.
- In a small bowl, mix together butter, garlic, lemon juice, Italian seasoning, salt, and pepper for the salmon in a small bowl. Set aside.
- Toss all ingredients for the veggies on the pan. Spread into an even layer and bake for 15 minutes.
- Remove the pan from the oven. Arrange the veggies so there is enough space for the salmon. Place salmon in the space and brush with melted butter mixture. Drizzle any remaining mixture on the veggies.
- Place back in the oven and bake 15-18 minutes, until salmon flakes easily with a fork. Take care not to overcook or the salmon will get rubbery!
- Remove the pan from the oven. Garnish with lemon slices and fresh parsley. Serve immediately.
