Ingredients

Units Scale

For the Salmon

  • 1 1/2 to 2 lbs salmon filet
  • 6 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon coarse salt
  • 1/2 teaspoon ground black pepper
  • Lemon slices, fresh parsley for garnish

For the Veggies

  • 1 lb fresh green beans, ends trimmed
  • 1/2 lb broccoli florettes
  • 1 lb carrots, peeled
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat oven to 400˚F. Grease a large rimmed baking pan.
  2. In a small bowl, mix together butter, garlic, lemon juice, Italian seasoning, salt, and pepper for the salmon in a small bowl. Set aside.
  3. Toss all ingredients for the veggies on the pan. Spread into an even layer and bake for 15 minutes.
  4. Remove the pan from the oven. Arrange the veggies so there is enough space for the salmon. Place salmon in the space and brush with melted butter mixture. Drizzle any remaining mixture on the veggies.
  5. Place back in the oven and bake 15-18 minutes, until salmon flakes easily with a fork. Take care not to overcook or the salmon will get rubbery!
  6. Remove the pan from the oven. Garnish with lemon slices and fresh parsley. Serve immediately.
