It's DECEMBER!!! Christmas is in the air so I made an appropriately decadent, delicious breakfast to celebrate. Or rather breakfast for dessert in the form of a chocolate dutch baby ๐.
I'm sure you're aware by now of my love for the dutch baby pancake. They're amazingly easy and look SO cool! You mix everything in a blender, pour into a hot, buttered skillet, throw it in the oven where it poofs up like a souffle and then you get to garnish it however you want. What's not to love??
Lemme convince you so you can join me in my chocolate dutch baby obsession.
One -ย Prep the whole thingย in a blender so there's barely any mess.
Two - It cooks up in oven in one skillet. No messy drips from making individual pancakes on a griddle.
Three - Start to finish in less than 30 minutes ๐๐ป.

I dressed up this chocolate dutch baby for the Christmas holiday with fresh raspberries, ruby red pomegranate arils, julienned mint, chocolate shavings, chocolate sauce, some homemade whipped cream and of course a dusting of powdered sugar.

Chocolate Dutch Baby

Description
Decadent chocolate skillet pancake whipped up in a blender and done in less than 30 minutes. The perfect excuse to eat dessert for breakfast!
Ingredients
- 3 eggs
- ยผ cup + 2 tablespoons AP flour
- 3 tablespoons cocoa powder
- ยฝ cup skim milk
- ยผ teaspoon coarse salt
- 1 ยฝ tablespoons white sugar
- ยฝ teaspoon vanilla extract
- ยฝ teaspoon vanilla paste (optional - can easily substitute with vanilla extract)
- 3 tablespoons unsalted butter
- Raspberries, fresh mint leaves, pomegranate arils, chocolate sauce, chocolate shavings, powdered sugar, and whipped cream for garnish

- Place a large, oven safe skillet in the oven and preheat to 425หF.
- While pan is heating, blend eggs, flour, cocoa powder, milk, salt, sugar, and vanilla in a blender until smooth.
- Remove hot pan from the oven and add the butter, swirling the melting butter around to coat the pan.
- Pour batter into the pan and return to the oven. Cook for 20-25 minutes, until puffed and golden brown.
- Remove from the oven. Sift powdered sugar over the puffed pancake. Add raspberries, pomegranate arils, whipped cream, chocolate sauce, chocolate shavings, fresh mint, and more powdered sugar to garnish as desired. Cut wedges out of the skillet and serve immediately.
Notes
To make homemade chocolate sauce: In a microwave, melt 4 ounces chopped chocolate and ยพ cup heavy whipping cream in 30 second increments, whisking together until thoroughly combined.
To make homemade whipped cream: Whisk together ยผ cup whipped cream with 2 tablespoons powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form. Refrigerate until ready to use.

Why do you use skim milk in this recipe instead of whole milk? Is it for health reasons (doubtful considering the whipped cream added), for the taste or for some other reason?

I only buy skim milk so it's just what I have in my fridge ๐ (a jug of whole milk would go to waste in our house). Whole milk would probably be just fine in this recipe if that's what you have on hand.
