So if you don't already know, I'm a big fan of the one pot/one pan full meal thing. It just makes life SO much easier doesn't it? Now I am working on leaning a little toward the healthier side (especially with the holidays on the way) and I realized I really don't cook enough seafood. Ergo, sheet pan paprika parmesan cod with broccoli!
This easy sheet pan dinner features flaky cod fillets coated in a flavorful paprika and parmesan crust, served with roasted broccoli for a nutritious and delicious meal.
I have a ton of shrimp recipes because they're so quick and easy but straight up fish? Fish tacos, battered fish and chips...Sensing a theme here? Apparently I prefer to fry my fish because obviously, it's delicious, but not the healthiest thing in the word.
I also hate when my kitchen smells like seafood for days after no matter what I do because I dared to cook fish on the stove. The WORST amiright?
Solution to ALL these problems: sheet pan paprika parmesan cod with broccoli.
You're entire dinner is done in one pan with no frying oil and no fishy smell because it's cooked in the oven! Simple as that.
Also, this dish has tons of flavor. No boring cod here! Dredged with paprika, cayenne, garlic, salt, pepper, fresh herbs and parmesan cheese, this seafood based recipe won't disappoint.

Ingredients
For the Cod
- 4 cod filets of equal size (about 4 ounces each)
- 1 tablespoon smoked paprika
- ⅛ teaspoon cayenne powder
- 1 teaspoon garlic powder
- 1 teaspoon fresh thyme leaves
- 1 teaspoon fresh rosemary, roughly minced
- ¼ cup freshly thin grated parmesan cheese
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
- 1 tablespoon extra virgin olive oil
- Fresh parsley, chopped, and lemon slices for garnish
For the Broccoli
- 1 ½ lbs fresh broccoli florettes
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
Instructions
- Preheat oven to 400°F. Grease half of a baking pan. Prepare a piece of foil or parchment paper half the size of the same baking pan. Fold up the edges about 1 inch tall to create a box. Grease the box and set aside.*
- Place broccoli florets on the greased half of the baking pan. Drizzle with olive oil and sprinkle with salt and pepper. Gently stir to combine. Place in the oven and bake for 10 minutes.
- While broccoli is cooking, combine paprika, cayenne, garlic, thyme, rosemary, salt, pepper, and parmesan cheese in a large, shallow bowl or plate until thoroughly mixed.
- Brush cod with olive oil on both sides. Dredge each piece of cod on both sides through the paprika parmesan mixture.
- Remove the pan from oven, gently stir the broccoli, and place the prepared box in the empty half. Place dredged cod in the box (or directly on the fully greased sheet pan if not using).*
- Place pan back in the oven and cook another 10-15 minutes, until cod is cooked through (middle is opaque and reaches an internal temperature of 145°F).
- Remove pan from heat and let rest for a couple minutes. Garnish cod with fresh parsley and lemon slices. Plate as desired, serve warm.
Notes
You don't have to make the little box, I like to so that the broccoli doesn't get soggy from juices released from the cod while it bakes. If you don't want to use the box, grease the entire pan and continue to follow the recipe starting at step 2.

Just what I was looking for - a recipe that somehow combined cod with broccoli. Both parts of the meal were delicious. I have never roasted broccoli before and I will never cook it any other way!

Made this tonight using halibut filets. Omitted the thyme but followed the recipe exactly beyond that. Served the fish and broccoli with jasmine rice. My husband said this was a restaurant-worthy meal. The spice mixture has incredible flavor…it would be great on shrimp or chicken, too.
