Happy weekend! Hope you had a fantastic July 4th. I spent it painting our new house, bingeing the new season of Stranger Things 😁, and cooking up some balsamic steak gorgonzola salad with grilled corn.
I recently realized it's been two years since I shared a steak salad here. TWO YEARS! Absolutely ridiculous considering how often I eat them 🤣. Especially during the summer months!
The main ingredients of this particular steak salad are...you guessed it! Grilled steak and grilled corn. No oven or stove needed! Keep the heat outdoors with this delicious entree salad.
Other realizations I've had since I made this balsamic steak gorgonzola salad:
First, I love grilled corn...as in LOVE grilled corn. It's so easy to make and it just screams summer doesn't it?
Second, grilled steak is FAN-tastic because it takes less than 10 minutes to cook. Major points there.
Third, salads. Salads all day every day all summer long. You with me?
Fourth, this balsamic steak gorgonzola salad with grilled corn combines ALL of those things. The ultimate win! Now if you'll excuse me, I need to finish Stranger Things season 3 before the spoilers rampant on the internet ruin my life. Recipe coming right up!
Balsamic Steak Gorgonzola Salad with Grilled Corn
- Total Time: 30 minutes
- Yield: 2-3 1x
Description
A 20 minute, delicious steak and salad dinner recipe with tomatoes, red onion, home grilled corn, gorgonzola cheese crumbles, gremolata and balsamic vinaigrette. Perfect for the summer grilling months!
Ingredients
For the Marinade
- 1 lb sirloin steak
- 2 tablespoons balsamic vinegar
- 1 tablespoon Worcestershire sauce
- ¼ cup extra virgin olive oil
- ½ teaspoon dijon mustard
- ¼ teaspoon garlic powder
- ½ teaspoon coarse salt
- ¼ teaspoon ground black pepper
For the Salad
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 4 ounces Gorgonzola cheese, crumbled
- 2 heads endive lettuce, outer leaves removed, halved and roughly chopped into 2 inch pieces
- 6 cups mixed spring greens
- 1 corn on the cob, husk removed
- 1 tablespoon extra virgin olive oil, for drizzling corn
For the Gremolata
- 2 tablespoons basil leaves, minced
- 2 tablespoons parsley, minced
- 1 clove garlic, minced
- 1 tablespoon lemon zest
For the Balsamic Vinaigrette
- 3 tablespoons balsamic vinegar
- ½ cup extra virgin olive oil
- ½ teaspoon dijon mustard
- Dash of salt and fresh ground black pepper
Instructions
- Marinate the steak: In a medium size bowl, stir together ingredients for the marinade. Place steaks in a large ziplock bag. Pour marinade over the steaks, seal the bag, and shake to coat. Chill in the fridge for 30 minutes.
- Make the gremolata: Combine the basil, parsley, lemon zest, and garlic in a small bowl. Set aside.
- Preheat a cast iron grill pan at medium-high heat or an outdoor grill. Drizzle corn on the cob with 1 tablespoon olive oil and liberally sprinkle salt and pepper. Using tongs, place on the heated grill. Cook each side until grill marks form on the corn kernels and they are somewhat softened, about 10 minutes total. Remove from heat when done and let cool. Slice corn kernels off the cob.
- Remove the steak from the fridge. Place on the grill or grill pan. Grill both sides 4-5 minutes for rare to medium rare. Remove steak to a plate and let rest for five minutes. Slice thinly against the grain.
- In a small bowl, whisk together ingredients for vinaigrette.
- Toss together half of the vinaigrette, half of the gremolata, mixed greens, endives, tomatoes, gorgonzola, sliced corn, and red onion in a large bowl.
- Lay sliced steak on top of salad. Drizzle steak and salad with gremolata and remaining vinaigrette as desired.
- Prep Time: 10 minutes
- Cook Time: 20 minutes

Gorgonzola wasn’t mentioned in the ingredients list. How much did you use?
Aberdeen says
Thanks for pointing this out! 4 ounces 😊.
Emily E Nordyke says
Where did you get your "copper"ware???
Your mom says
As much as you please. 😆
Susana j hicks says
Easy Meal to make. My husband wanted a salad for dinner and I searched for a “Good” dinner salad. Worked well, I substituted greens and instead used half a head of iceberg. Hubby even enjoyed the vinaigrette
Grace says
Hi! Do you have any idea approximately how many calories are in a serving?
Aberdeen says
I don't I'm sorry! If you google calorie counters you can input the ingredients and find it 👍🏻.
Janine Grossman says
Will these ingredients work with chicken???
katie says
can you use dried spices for the gremolata?
Aberdeen says
Hi Katie! Unfortunately you can't use dried spiced in place of the fresh ones BUT you could add some to the steak itself for some extra flavor.
Diane Rossignol says
I used the already chopped basil that you leave in the fridge and I used dried parsley, it was still delicious.
Stephanie Margalski says
I wish I would have taken a pic. This salad was soo good! I am a salad snob. This was amazing. Followed 100%. Delish
Aberdeen says
Thank you!!!
Stephanie Margalski says
Just made this for the 2nd time and it is my absolute FAVORITE steak salad. The lemon zest in the gremolata is so amazing and really such a nice bright flavor suprise! Love it and thank you again!
Allison says
Delicious! Even my 7 y/o cleaned his plate!
Simple Spoonfuls says
I can’t wait to make this, it looks absolutely incredible! How do you manage to get the bunch chunks of corn as you cut them off the cob? Mine always just crumbles into individual kernels.
Melissa says
Use a knife with a 5-6 inch blade. Cut a little closer to the cob and you’ll find the corn stays together in a clump more than in single kernels. Sharpen those knives! You can’t beat a Japanese knife (Miyabi).
Gurjit Lopez says
Very delicious, and easy to make!
Farrah says
This was AMAZING!!! SO MANY LEVELS of flavor. Fed my family of 4 perfectly! (I subbed to heads of Romain as that's what I had on hand) Thank you!
Adrie says
We loved!! So fresh and full of flavor.
Julia says
I mostly eat salads in summer, but they can get a bit boring after a while. I am so happy I've found this recipe. Delicious!
Maureen says
Made this tonight and everyone loved it! I did have to put the Gorgonzola and Onions on the side because the majority don’t like them.
Evelyn says
Fabulous dish! Our entire family loved it! Will for sure make it again--many times! Such an easy meal. I prepared each part ahead of time, including marinating the steak. Took it all to my son's home. He grilled the steak and sliced it. I simply put the delicious components together on a platter. It was as delicious as it was beautiful!
Leah says
Made this recipe. Super good! I added honey to the dressing and used blue cheese instead of Gorgonzola, added avocado and red pepper otherwise no changes. Great salad
Helenzat says
This recipe is great. I made it several times. Better than a restaurant.
Lynn says
Super easy to make. Very flavorful! I will make this again and again. The marinated steak was delicious!
jennifer says
how many will this serve? would i need to double it for four adults and 6 kids under age 8?
Debra says
Made this recipe on Saturday and it was so delicious! Thank you for sharing your recipes.
Hannah says
What kind of endive did you use curly or Belgian?
Chris Baccus says
My wife doesn't like gorgonzola so I used feta which was fine. Also, I did the steaks sous vide. That came out great with the marinade vacuum sealed for a slow cook at 140degrees for 8 hours.
Melanie says
Delicious! I added a little honey to the balsamic dressing...so good!
Harper M. says
Best salad I’ve ever had!!! This salad is so fresh and super easy to make. This is a weekly occurrence at our home.
Mag says
Do you think you could do this with chicken? I love this recipe but we try to limit how much read meat we eat.
Aberdeen says
Absolutely! Chicken would be delicious. When you grill the chicken just make sure it's cooked all the way through (temps at 165˚F).
Cheryl says
Made this on a whim so had to sub some instruments but it turned out delicious nonetheless! Subbed blue cheese, added avacado, and honey to the vinaigrette. It's also the middle of winter so I pan-browned frozen corn which worked well. I'll definitely be adding this to my regular rotation.
Cherice says
Do you allow the steak to come to room temp before placing on the grill for an even cook?
Paula Wood says
This was amazing! I have always marinated my flank steak this way and grill it for 5-6 minutes per side. Adding the rest of these ingredients was fantastic. My family really enjoyed it.
Caron says
Could I marinate the steak longer--say 3 or 4 hours? Normally I know this wouldn't be an issue, just wondering if it's better with a quick marinating time. Trying to plan ahead of a busy day!
sally plumly says
Is this salad gluten free?
Karen K says
I'm confused about what to do with the "other half" of gremolata & dressing (?) Pour it over the steak? Separately? And you add dressing AND gremolata to the greens? That won't taste weird? I'd like to try this but not until the directions are more clear. Thank you
Janine Grossman says
That was delicious!!! I used feta instead of gorgonzola (store did not have any) and I added avocado, bell peppers and carrots. That dressing is amazing. This will for sure be on my weekly rotations! yum! Gonna use chicken next time!
Paula Fultz says
This was a great summer salad. I cut the olive oil down to 3 T. In both the marinade and dressing, which worked out well. I also substituted blue cheese for Gorgonzola, because that’s all I had. My husband loved this too - said it was a keeper! Thanks!
Deidre says
This salad is delicious! My sister made it when we were in town visiting and have made it three times since then.
LoB says
One of the best salads I have ever had!

Carol says
Great recipe! Super flexible. Can add or sub in feta, avocado, cucumbers, baby bells, dill, roasted butternut... depending what is on hand.
Paige says
This definitely did not disappoint. I will certainly be making again. So good!! Thank you for sharing.
Dale Irick says
This was def a great salad! Felt like a perfect meal, adding some grilled French bread and a Prosecco, who could ask for more?
K says
Loved this recipe! I don’t eat red meat so I did a variation of the marinated to a piece of chicken for myself.
M. Miller says
I did not like the gremolata. I think it was the lemon - it was too strong and I used less than half of it. Otherwise it was good.
James says
Nice recipes. Thx

Delicious recipe! Definitely a repeat!
Chris says
One of our favourite salads
Meg says
Made this salad for a summer picnic and it was a huge hit! The steak, corn, cheese combo is fantastic with the dressing. I added a little honey to the balsamic since I like it a little less tangy. Will be adding this into the summer menu rotation.
Erik says
The steak and marinade 5.0
The dressing 3.0
The salad 3.0
Though the flavors were good, I think there were just too many. The perfect bite (with all ingredients in one bite) did not allow you to taste each item. I’d cut out the endive for something less bitter, more Gorgonzola, and maybe a dairy based (thinking crème fraîche) dressing to mix the Gorgonzola with.
Jenn says
Loved by the whole fam. Used TJ Unexpected Cheddar instead of Gorg as it's what we had.
Kristin says
This was SO good and easy to make. I didn’t have endive, but followed recipe otherwise (I did double it). Used flank steak and marinated for only 30 minutes-great flavor. Definitely will be only regular rotation!
Aberdeen says
Thank you so much 🥰!
Christine says
OMG this salad is amazing. The dressing will be my go to. You have to try it!!!
Stephanie L says
Wow, what a great salad. I cannot wait to make again. Used what I had so that was arugula in place of endive and blue cheese in place of gorgonzola. I have very good quality balsamic and EVOO so dressing was fabulous as was the garden tomatoes, basil and parsley and farm fresh MN corn. Still thinking about it a couple of nights later. YUM. Thank you.
Laurie says
YO.......
I substituted the cheese (I had feta, so I used that), and I hate tomatoes so I substituted red bell pepper. I put garlic salt on the corn (which in retrospect should have been garlic powder because it was a little salty) and I accidentally bought cilantro instead of parsley, so I omitted it entirely. It was delicious! My husband has been gone for five weeks for work, he'll be home this week and I definitely plan on making this for him.
Aberdeen says
Thank you so much!!! I'm so glad the substitutions turned out, hope your husband enjoys it 😊.
Aberdeen says
🙌🏻🙌🏻🙌🏻 love the substitutes, sounds de-LICIOUS! I hope your husband enjoyed it 😊.
Tara says
Delicious! Made this with both shrimp and steak. I would skip the endive next time as it was quite bitter. Maybe sub with radicchio or arugula. We added some avocado and grilled the opinion but all the rest was as listed.
Carrie Hammond says
I have made this salad twice and both times it has been a huge hit! The last time my husband woke up still talking about how great it was! Love it!!
Karina says
I was so looking forward to this salad. In the end it was just ok. Something about the proportions were wrong for me and for sure the gremolata didn’t work for me. I’d be happy to try again without the clove of raw garlic (I don’t get that at all). Oh well. Cheers to trying new things in the kitchen!
CJ says
This recipe is incredible!!!! I don't have a grill so if you all are wondering how it might look to switch the cut of meat to filet (2 inches thick) and cook it with your stove and oven, this is what I did: Steaks sat out for 20 minutes, then in marinade for 30 minutes on the counter. Then I patted them dry and salted them and seared on both sides for two minutes each in a thick-bottomed oven safe skillet. Then I popped that in the oven (415F). Steaks were between 135-140F internal temp by 9 - 10 minutes. Huge hit!
J Wass says
This is an easy and delicious recipe. It's so colorful. I used endive and a spinach arugula mix because that is what I had in the fridge. Next time I would double the corn. It was so good. I will also add toasted pine nuts. Such a great salad!
Lucy says
So good! I use just mixed greens and feta instead of gorgonzola because that's what my store had. So yummy!!!
