The produce section is overflowing with DELICIOUS fruit! Anyone else agree? I love this time where we're at the end of the spring but the beginning of summer so we get the best fruit of both seasons 😍. Let's make it super easy and combine it all in a bowl and call it berry watermelon dragon fruit salad 🙌🏻.
This salad is jam packed with ALL the fruit: strawberries, blueberries, raspberries, cherries, watermelon, and even dragon fruit! Oh and no messy dressings here. There's enough different flavors that just a sprinkling of poppy seeds and a little fresh mint does the trick.
Speaking of dragon fruit, how COOL is that??? The black seeded white fruit is completely hidden in a crazy looking hot pink and lime green skin. It looks awesome when you plop it in your fruit basket next to those standard oranges and apples. A conversation piece at the very least.
For those of you with less adventurous palates, the dragon fruit actually tastes and has a very similar texture to a kiwi. I just happen to be vaguely allergic to that delectable green fruit, as well as pineapple. Apparently eating something that makes your mouth itch isn't normal 😅. Definitely still eat them though...Super good decisions right?
Ah well, at least there's the fantastical looking dragon fruit to substitute. Ergo, berry watermelon dragon fruit salad for the WIN!
Berry Watermelon Dragon Fruit Salad
- Total Time: 10 minutes
Description
A refreshing fruit salad with berries, cherries, watermelon and dragon fruit sprinkled with mint and poppy seeds.
Ingredients
- 3 cups watermelon, cut into 1 inch pieces or scooped with a melon baller
- 2 cups strawberries, sliced
- 2 cups blueberries
- 2 cups raspberries
- 1 dragon fruit, halved and scooped with a melon baller
- 2 cups cherries, pitted and halved
- 3-4 fresh mint leaves, roughly chopped
- 1-2 teaspoons poppy seeds, as desired
Instructions
- Toss all ingredients together in a large bowl. Serve chilled for best flavor. Enjoy!
