I'm so ready to kick 2019's butt because I refuse to be sick and sad anymore. ANYMORE! I'm going to do my damnedest to get healthy and stay healthy this year. After buying all the supplements possible you know what that means...I was forced to take a look at my diet. And what did I find?
All the carbs, and all the cheese. Delicious right??
Not the best in nutritional value though. Now stay with me here, there's no way I could just ditch my two favorite things. They will forever remain a part of my diet because I honestly just can't live without them. But that doesn't mean I can't limit them and pave the way for other, healthier things. Like protein apparently, and iron rich foods (being borderline anemic for a decade apparently has a detrimental effect on your health. WHO knew? 😶).
But here's the important question: If I can't chow down on bagels and cream cheese for breakfast everyday, WHAT am I supposed to do? I need something, quick, fast, delicious and healthy.

SMOOTHIES!!! Plus a piece of whole grain toast because I can't not (with peanut butter instead of butter. See? I'm trying!).
We're starting the year off strong with a strawberry banana oat smoothie. Now of course you can switch up the ingredients in this recipe to suit your diet. You need a little more dairy? Use dairy milk instead of coconut. Sticking with soy milk? Go for it. Switch the yogurt to greek yogurt if that's your thing. Also, I added flax seeds for some extra nutrients but if you prefer chia seeds add those. Or both!

Strawberry Banana Oat Smoothie

Description
Simple, quick, and healthy breakfast smoothie made from fresh ingredients. Perfect for those on the go!
Ingredients
- 1 cup coconut milk (I used unsweetened)*
- 1 cup plain, non-fat yogurt
- 1 teaspoon lemon juice
- 8 ounces fresh strawberries, hulled
- 2 bananas
- 1 cup gluten free old-fashioned rolled oats
- 2 teaspoons flax seeds
- Optional: 1 teaspoon honey to sweeten
Instructions
- Blend all ingredients in a blender until smooth. Pour into glasses and enjoy chilled!
Notes
Feel free to substitute your favorite milk! Dairy milk, soy milk, almond milk, etc.
Plain greek yogurt can also be used instead of regular plain yogurt.
