Welcome to the weekend guys! I'm actually off to a pumpkin patch this morning to finally get into Halloween this year. It's been so busy I just got around to putting up all the fun decorations last night. Usually, they're up almost all October long but you know how it goes. Dan is actually testing out the enormous jumping bug he scares all the trick-or-treaters with as I type this. But anyway, I feel I've finally caught up to the season, and in the spirit of Autumn, here is an easy, flavorful Chai Spice Apple Cranberry Crumble to keep that sweet tooth satisfied until the Halloween candy goes on sale ????.
So you might be thinking, Chai Spice Apple Cranberry Crumble?? Mmhmmm. That's right friends. If you saw my Spiced Chai Tea Latte post, you'll know just how much I love the flavors in a delicious cup of Chai. Well, it turns out, those flavors also pair wonderfully with baked apples! And it's Fall so cranberries were a must.
The crumble itself is easy peezy. It's actually the same recipe I used for my Single Serving Summer Peach Crisps! I do love universal recipes, they make life so much easier sometimes. Since I baked my Chai Tea Apple Cranberry Crumble in mini crock pots, I actually didn't use all of the crumble you end up with from the recipe. So, if you feel like making the same cute little single serving desserts, you could easily halve the crumble portion of the recipe to end up with just the right amount. If you are going to make it in a classic pie pan, then you're good to go! Although having said that, that crumble is delicious. You might just wanna pour all of it on top of those mini crock pots and call it a day ????.

Ingredients
For the Chai Spice Mixture
- 1 teaspoon ground cardamom
- ¼ teaspoon ground clove
- ⅛ teaspoon ground black pepper
- 2 teaspoons cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon fennel seeds, ground
For the Filling
- 3 lbs honey crisp/granny smith apples
- 1 cup fresh cranberries, whole
- ¼ cup white sugar
- ¼ cup brown sugar, packed
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon corn starch
For the Crumble
- 1 cup all-purpose flour
- ½ cup oats
- ½ cup brown sugar
- 2 teaspoons cinnamon
- ¼ teaspoon sea salt
- ¼ teaspoon nutmeg
- 1 teaspoon vanilla extract
- ½ cup unsalted butter, melted
Instructions
- Preheat oven to 375˚F. Grease a 9X13 baking dish, or desired pie pan. Set aside.
- In a small mixing bowl, combine all ingredients for the chai spice mixture. Set aside.
- In a large mixing bowl, combine all ingredients for the filling. Stir until completely mixed. Add the chai spice mix and stir until completely mixed. Cover the bowl with a towel and let sit for 10 minutes while making the topping.
- Combine all ingredients for the crumble topping in a small bowl and stir until thoroughly mixed.
- Give the filling a good stir and pour into greased baking dish. Top with crumble mixture.
- Place on the center rack of the oven and bake for 35-40 minutes until juices are bubbling and crisp topping is golden.
- Cool for 10 minutes on a wire rack. Serve warm with a scoop of french vanilla ice cream.
