So everywhere I hear that summer is coming to an end. Fall fashion is all the rage and every store is telling me how to set up my living room for autumn...It's still going to be 80+ degrees this week. I'm confused. Not that I'm not ridiculously excited for autumn. ALL the pumpkin flavored things this way please!!! It's by far and away my favorite season. Of all time. Ever. The cooling sweater weather, boots, pumpkins and leaves changing, boots, halloween and thanksgiving, boots, best time to watch practical magic and hocus pocus, and of course boots. My birthday is also in november which obviously makes Fall the best season, as I'm sure you'll agree. Now that I'm looking about, the tops of the maple trees outside my winder have red leaves on them....!!!!!! AUTUMN!!!!!
Ok wait. Let's not get ahead of ourselves (but I'm going to keep an eye on those trees...!!!) It's still August after all, and August requires....wait for it....PEACHES! Because come on, summer = peaches. Even one of my favorite songs right now by In the Valley Below is called Peaches. Fitting yes?
Ergo, Single Serving Summer Peach Crisps!
Yessss dessert. These little guys (honestly they're not that little, definitely not mini like the rhubarb crumbles) are quicker to bake than a regular pie due to their size and are just so snazzy when you present them to your guests. "Here's your own, personal, peach crisp." YES! I'd be excited. Also, as it's still summer and the grilling, patio shenanigans are still in full swing, these are great for the outdoors. These little soup crock-bowls usually come with lids and can be easily transported anywhere and you don't need to bring other serve ware! (Just some spoons please). Beach BBQ? Done. Picnic in the park? Done. Labor day party? Done.
Seriously these are so easy-peez. Oh did I forgot to mention they're also DELICIOUS? Seriously. Even if you decide to use frozen, already sliced peaches, it'll come out just as tasty. Hmm frozen peaches....means....peach crisp ALL year round! YES!
So you guys, I'm still staring at those maple trees out the window....let's get rolling on some Single Serving Summer Peach Crisps before I bust out the cranberry, pumpkin, sweet potato, butternut squash MADNESS!

Single Serving Summer Peach Crisps
- Total Time: 55 mins
- Yield: 4-6 1x
Ingredients
For the peach filling:
- 2 lbs peaches, peeled, pitted, and quartered
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- ¼ cup golden brown sugar, packed
- ¼ tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp cornstarch
For the crisp topping:
- 1 cup flour
- ½ cup outs
- ½ cup brown sugar, golden
- 2 tsp cinnamon
- ¼ tsp sea salt
- ¼ tsp nutmeg
- 1 tsp vanilla extract
- ½ cup unsalted butter, melted
Instructions
- Preheat oven to 375˚F. Butter or spray 4 oven safe 16 oz crock bowls or 8 mini cocettes. Set aside.
- In a large mixing bowl, combine all ingredients for the peach filling. Stir until cherries are completely coated, pressing gently on them to release their juices. Cover with a towel and let sit for 10 minutes while making the topping.
- Combine all ingredients for the crumble topping in a small bowl and stir until thoroughly mixed.
- Spoon an equal amount of the peach mixture in each bowl. Top generously with crisp topping mixture.
- Place the bowls on the center rack of the oven and bake for 35-40 minutes until juices are bubbling and crisp topping is golden.
- Cool for 10 minutes on a wire rack. Serve warm with a scoop of french vanilla ice cream.
