Whew! Made it through Monday guys! On my end it's mostly thanks to this Green Superfood Coconut Smoothie. Remember on Saturday when I said easy foods only? Well, tadaaaaa!!!!
Throw the ingredients for this delicious concotion in a blender and press the on switch. Can't make it much easier than that!
It is randomly 80 degrees today in Seattle. WHAT is happening? Bright and sunny and hot. It's been warming up since Friday so I've basically had one of these smoothies every day for the past three days. 5 minute recipe? ???????????? My favorite when it's above 80˚F and I can't breath because Ash and Trees are pollinating the up to the stratosphere. Ugh.
Anyway, I'm betting you'll love these too because they're also just so tasty! Light and fresh, these Green Superfood Coconut Smoothie even have ground flax seed in them for a natural protein boost. One sip and you can't even tell! It just tastes like a refreshing beverage served in an actual coconut on a beach....
Ok, maybe not QUITE like a Mai Tai but the coconut base is enough to at least make you reminisce 🙂

Green Superfood Coconut Smoothie

Description
A refreshing and light 5 minute coconut and spinach smoothie with a flax seed boost. Gluten free, dairy free, vegan.
Ingredients
- 2 cups baby spinach
- 1 large, ripe banana
- 2 cups chopped mango
- 2 cups coconut milk
- 1 tablespoon ground flax seeds
Instructions
- In a blender, blend spinach and coconut milk together on high until completely smooth.
- Add banana in chunks, mango and ground flax seed. Blend on high until completely smooth. Can chill overnight for next day enjoyment.

Coconut milk is great way to go for those who enjoy coconuts. It's smooth, sweet and mixes well with others. Props to Calypso for all her hard work.
