Hey hi! Sorry for the quick bout of absence there. Turns out, holidays with the lil' cupcake are rather insane 😅. We all needed a couple days to rest and recharge, but we officially have a one year old now! Truly shocking that there's now a toddler crawling/half walking around the house 😦...I say it's definitely time for some more holiday treats, particularly those of the alcohol infused variety 😎. Ergo, no bake chocolate rum balls!
How to Make No Bake Chocolate Rum Balls
It's SO easy! Want to guess why? It's all there in the title! Aka NO BAKING NEEDED! Oh and absolutely no chocolate melting.
Grind up some vanilla wafers and then literally just mix all the ingredients together in a bowl. Form balls, chill, and roll in your favorite garnishes.
That's all there is to it!
PS. Although these taste strongly of rum (in the best way possible), you'd have to eat at least half of the batch to feel any effects of alcohol.

Description
These quick, easy, festive rum balls are the perfect holiday treat infused with your favorite dark or spiced rum. Done in just 30 minutes with no baking or chocolate melting required!
Ingredients
- 8 to 12 ounces vanilla wafers (about 2 cups ground)
- 4 to 6 ounces short bread pecan cookies (about 1 cup ground)*
- 1 cup chopped pecans
- ¼ cup cocoa powder
- ½ cup powdered sugar
- ¼ teaspoon sea salt
- ½ cup dark rum or spiced rum
- 3 tablespoons light corn syrup
- 1 teaspoon vanilla paste or vanilla extract
- Garnishes for rolling (festive sprinkles, sanding sugar, shredded coconut, cocoa powder, etc)
Instructions
- Grind vanilla wafers, shortbread pecan cookies and chopped pecans in a food processor until they reach a bread crumb consistency.
- In a large mixing bowl, whisk together ground cookies and pecans with the cocoa powder, powdered sugar and salt until thoroughly mixed.
- Pour in the light corn syrup, vanilla paste, and rum. Stir with a rubber spatula or wooden spoon until completely combined and can be formed into balls.
- Using a cookie scoop or a tablespoon, scoop the mixture and form into 1 inch balls. Place on a plate and chill in the fridge for 20 minutes.
- Roll in garnishes to coat as desired. Store in an air tight container in the fridge for up to one week. Can also be frozen for up to one month. Thaw before eating.
Notes
If you don't want to use the pecan cookies, you can absolutely substitute them with more vanilla wafers!
