The smoky, warm end to summer still appears to be lingering here in the PNW. Every time it cools down I think "AH this must be it" and then it warms back up to the 70s and I get air quality alarms on my phone 😑. The reason I'm bringing this up? Well, usually it's time to dive into baking season by now but the vibes aren't right and it's still too warm to turn on the oven. Whatever shall we do?...How about no bake chocolate peanut butter pretzel bars?!
How to Make No Bake Chocolate Peanut Butter Pretzel Bars
Step 1. Melt chocolate with some coconut oil - easy peezy in the microwave! 30 second intervals, stir in between
Step 2. Combine the rest of the liquids in a small bowl and heat up in the microwave for a minute or so, and stir until smooth.
Step 3. Mix heated liquids with remaining ingredients and half of the chocolate. Pour into a baking dish and chill for 10 minutes.
Step 4. Top with remaining chocolate. Chill again and then decorate as desired! I went for a Halloween look, October and all 🎃.
See? When I said no baking, I was serious. These just require some time in the fridge till firm up and then they're good to go! They also take less than hour to make. WIN win win.

Description
These delicious dessert bars complete with peanut butter, corn flakes, and chocolate covered pretzels are whipped up in less than an hour and are great to decorate for any holiday, no baking required!
Ingredients
For the Bars
- 16 ounces dark chocolate
- 16 ounces semi-sweet chocolate
- 1 cup natural peanut butter
- ½ cup coconut oil
- ¼ cup maple syrup or agave syrup
- 1 teaspoon vanilla extract
- 5 cups corn flakes
- 1 cup chocolate covered pretzels, roughly chopped
For Halloween Decorating
- Black candy melts
- Bright white candy melts
- Halloween sprinkles
- Colored sanding sugar (I used black, puple, and orange sanding sugar)
Instructions
- Grease or prepare a 9X13 baking dish with parchment paper.
- Add peanut butter, ¼ cup of the coconut oil, syrup, and vanilla extract in a medium mixing bowl. Heat in the microwave in 30 second intervals, mixing together in between until smooth. Alternatively, heat up in a medium sauce pan on the stove over medium low heat, stirring frequently until smooth.
- In the microwave or in a double boiler on the stove, melt chocolate and ¼ cup of the coconut oil together until shiny and smooth. (I used the microwave and heated the chocolate in 1 minute intervals, for 3 minutes total, stirring between each interval. If using a stove top double boiler, heat on medium low and stir frequently). Set aside and keep warm.
- In large bowl or standing mixer, crush half the corn flakes with your hands. Add the rest of the corn flakes and the chopped chocolate covered pretzels.
- Stir in the peanut butter mixture and half of the melted chocolate until completely combined.
- Spread the mixture evenly in the prepared baking dish. Place in the fridge for chill 10 minutes.
- Remove the baking dish from the fridge. Pour remaining melted chocolate on top of the chilled mixture and spread into an even layer. Place back in the fridge and chill 15-20 minutes, until chocolate on top is solidified.
- Remove the mixture from the pan and decorate as desired! See notes for Halloween options. Slice into 12-16 squares and store in an air tight container.
Notes
I melted some black and bright white candy melts and drizzled both colors over the bars. Then, before the drizzle cooled too much, I sprinkled them with Halloween themed sprinkles and black, orange, and purple sanding sugar.
