Ingredients
- 1/2 cup plain greek yogurt (I used nonfat)
- 1/2 cup low-fat cottage cheese
- 1/4 cup fresh mint
- 1/4 cup fresh dill
- 1/4 cup fresh tarragon
- 1/4 cup fresh chives
- 1 garlic clove, minced
- 2 tablespoons lemon juice
- 2 teaspoons capers
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon dijon mustard
- Salt and pepper to taste

Notes
For a thinner dressing, add water or skim milk 1 tablespoon at a time until it reaches your desired consistency.
For a thicker dressing, blend in extra Greek yogurt or cottage cheese until creamy.
If you can’t find fresh tarragon, substitute fresh basil, cilantro, or extra parsley. The flavor will be slightly different but still delicious.
For extra tang, add more lemon juice or capers to taste.
