Description

From neglected, over-ripe bananas to maple-infused delights, these maple banana muffins are fluffy, moist, and super easy to make. Great for a quick breakfast or snack on the go!


Ingredients

  • 1 3/4 cup unbleached, all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon sea salt
  • 1/2 cup vegetable, canola, or melted coconut oil
  • 2 large eggs, beaten
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup overripe bananas, mashed
  • 1/2 cup walnuts, roughly chopped


Instructions

  1. Preheat oven to 350°F. Grease a 12 cup muffin pan.
  2. In a medium mixing bowl, whisk together flour, baking soda, baking powder, cinnamon, allspice, nutmeg, and sea salt until completely combined.
  3. In a large mixing bowl or in a stand mixer, whisk together eggs, oil, vanilla, maple syrup, and bananas until completely combined.
  4. Add the dry flour mixture into the wet egg mixture and whisk until just combined.
  5. Gently fold in walnuts.
  6. Divide the batter evenly between each muffin cup, filling each one about 3/4 of the way full.
  7. Bake on a center rack for 20-25 minutes, until tops are golden and bounce back when touched.
  8. Let cool in pan for 5 minutes and then transfer the muffins to a wire rack. Serve warm.
