Description

🥜🍫Sweeten your mornings or add a nutty twist to your afternoon snack with this indulgent chocolate peanut butter granola recipe. Made with natural peanut butter, cocoa powder, and packed with healthy oats, enjoy as a morning parfait, bowl of cereal, or even it as a healthy sweet treat at any time of day!


Ingredients

  • 3 cups gluten-free rolled oats
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil, melted
  • 1/2 cup natural smooth peanut butter
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1/2 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup roasted, unsalted peanuts, roughly chopped
  • 1/4 cup toasted coconut chips
  • Optional: 1/4 cup (dairy-free) chocolate chips


Instructions

  1. Preheat oven to 300°F. Grease or prepare a baking sheet with a silpat or parchment paper.
  2. In a large mixing bowl, stir together oats, cocoa powder, salt, cinnamon and nutmeg.
  3. Add peanut butter, molasses, maple syrup, vanilla extract, brown sugar, and melted coconut oil. Stir together until completely mixed.
  4. Spread the granola mixture onto a baking sheet.
  5. Bake for 40 minutes, stirring and rotating the pan after 20 minutes.
  6. After 40 minutes, stir in peanuts and place back in the oven for another 20 minutes.
  7. Remove from oven, let cool 10 minutes, stirring occasionally to keep from sticking. Cool completely on a wire rack.
  8. Once cooled, stir in coconut flakes and chocolate chips if using.
  9. Store in an airtight jar up to 2 weeks and enjoy with yogurt, milk, or just as a snack!

Notes

For the brown sugar, I like to use Swerve brown sugar substitute, just to lighten up a little bit on the sugar content!
