Healthyish Dark Chocolate Oatmeal Bars

Ingredients

  • 2 1/2 cups oats
  • 1 cup unbleached, all purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon molasses
  • 1 cup coconut oil, room temperature (softened but not melted)
  • 2 cups dark chocolate chunks/chips (I chopped up a couple dark chocolate bars we had lying around!)


Instructions

  1. Preheat oven to 350°F. Grease a 9X13 inch baking dish and prepare with parchment paper. 
  2. In large mixing bowl, cream together coconut oil and sugar until light and fluffy. Whisk in the rest of the ingredients except for the chocolate chunks until combined. Gently fold in chocolate chunks.
  3. Spread the dough out in the prepared baking dish. Top with a few extra chocolate chunks.
  4. Bake 22-24 minutes until the center is just set. If you're not sure, always err on the side of underdone!
  5. Cool 1 hour to let bars set or eat immediately with a fork!
