Simple Double Chocolate Granola

Ingredients

  • 3 cups gluten-free rolled oats
  • 1/2 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup molasses
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt
  • 1 cup chocolate chunks
  • 1 cup whole almonds


Instructions

  1. Preheat oven to 300°F.
  2. In a large mixing bowl, stir together oats, cocoa powder, and salt.
  3. Add honey, molasses, maple syrup, vanilla extract, and coconut oil. Stir together until completely mixed.
  4. Spread the granola mixture onto a baking sheet.
  5. Bake for 40 minutes, stirring and rotating the pan after 20 minutes.
  6. After 40 minutes, stir in whole almonds and place back in the oven for another 20 minutes.
  7. Remove from oven, let cool 10 minutes, stirring occasionally to keep from sticking. Stir in chocolate chunks. Cool completely on a wire rack.
  8. Store in an airtight jar and enjoy with yogurt, milk, or just as a snack!
