Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground clove
  • 1/8 teaspoon all spice
  • 1 tablespoon ground ginger
  • 1 tablespoon candied ginger, minced
  • 3 tablespoons brown sugar
  • 1 tablespoon white sugar
  • 1/2 cup molasses
  • 1 1/2 cups buttermilk
  • 1 teaspoon vanilla extract
  • 1/3 cup unsalted butter, softened
  • 1 egg yolk
  • 3 egg whites


Instructions

  1. Preheat a waffle iron. Prepare with cooking spray.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, clove, all spice, ground ginger, candied ginger, and sugars together.
  3. In a small mixing bowl, whisk together egg yolk, molasses, buttermilk, vanilla extract, and softened butter together, until completely mixed.
  4. Pour the liquid mixture into the flour mixture and stir until just combined.
  5. In a medium mixing bowl, whisk egg whites until they form stiff peaks. Gently fold into waffle mixture until just combined.
  6. Bake in waffle iron according to manufacture's instructions. (Should take about 4-5 minutes to come out nice and browned.)
  7. Top with sifted powdered sugar, butter, maple syrup and candied ginger slices. Serve immediately.
