Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup oats
  • 1/2 cup white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cinnamon
  • 1 large egg, beaten
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/4 cup bananas, mashed


Instructions

  1. Preheat oven to 400 F and grease or line a 24-cup mini muffin tray with
  2. In a large mixing bowl, combine flour, sugar, oats, baking soda, baking powder, cinnamon and salt.
  3. In a another mixing bowl, whisk the egg, buttermilk, vegetable oil, and vanilla extract together.
  4. Add the mashed bananas to the egg mixture and stir until completely mixed.
  5. Pour the wet ingredients into the dry flour mixing bowl and stir until combined.
  6. Pour the batter equally into each mini muffin cup and bake for about 12-15 minutes until an inserted toothpick comes out clean and the tops are golden.
  7. Remove to a rack to cool.
