Description

Whether you're looking for a quick breakfast option, a delightful brunch addition, or a flavorful snack to enjoy any time of day, these cheesy ham spinach puff pastries are sure to become a favorite. Best of all, they take just 30 minutes start to finish!


Ingredients

  • 1 puff pastry sheet, thawed, kept chilled
  • 6 slices thinly sliced swiss cheese
  • 1 cup shredded mozzarella cheese
  • 6 slices thinly sliced ham - I used Black Forest Ham
  • 1 cup fresh spinach leaves, roughly diced
  • About 1/2 tablespoon poppy seeds, for sprinkling
  • Fresh thyme leaves for garnish
  • Egg wash for brushing (1 egg yolk, 1 tablespoon milk or water)


Instructions

Prepare the Puff Pastry

  1. Preheat oven to 400˚F. Prepare a baking sheet with parchment paper or silpat.
  2. On a lightly floured surface, slice each sheet into 6 rectangles (cut in half and then each half into three equal parts). Place the 6 rectangles onto the prepared baking sheet.

Assemble the Pastries

  1. Leaving a 1/2 inch border along the edges, layer each rectangle as follows: 
    • Start with 1 slice of swiss cheese.
    • Then add 1 slice of ham on top.
    • Finally, sprinkle ham with a little spinach and mozzarella, making sure to equally distribute the spinach and mozzarella among the 6 pastries.
  2. Lightly egg wash the edges of each pastry.
  3. For each pastry, fold two opposite corners together up and over the filling. Egg wash the top and sprinkle lightly with poppy seeds. 
  4. Optional: If you've been working a while/it's taken longer than you thought, go ahead and chill the pastries in the refrigerator for 10 minutes or so. This helps the layers of the puff pastry firm up again a little bit and result in a crispier, lighter crust. 

Bake the Pastries

  1. Place the pan on the center rack in the preheated oven. Bake the pastries for 12-15 minutes, until the crust is golden and the cheese is melted and bubbling. 
  2. Remove from heat and place on a wire rack until cool enough to handle.  
  3. Garnish with fresh thyme leaves and plate as desired. Can be enjoyed eaten warmed up or at room temp!

Notes

Thaw the puff pastry sheet in the refrigerator overnight. This helps make it easier to handle and will get you that beautiful golden, flaky crust.

If you want to amp up the flavor of these pastries a bit (and you have some extra time), sauté the spinach and ham together with a couple teaspoons of olive oil until the spinach wilts before filling the pastry. This also helps remove excess moisture!

Keep those pastries from popping open by not going overboard with the filling and leave a little edge around the border to ensure a nice seal.
