Description
Impress your guests with this easy-to-make cheesy fig brie flatbread! With creamy brie and Italian cheeses, succulent figs, and a crispy flatbread base, this recipe is sure to be a crowd-pleaser.

- 1 store-bought or homemade pizza dough
- 8 ounces fresh mission figs, quartered/sliced and stems removed
- 8 ounces brie, rind removed
- 2 cups shredded Italian cheese blend
- 1/2 cup shredded parmesan cheese
- 1/3 cup fig spread, more as desired
- 1 to 2 tablespoons extra virgin olive oil
- Fresh thyme leaves
- Fresh ground black pepper
Instructions
- Preheat oven to 425˚F. Roll pizza dough into a 12" by 15" -ish rectangle. Brush with olive oil and place on a baking sheet with parchment paper.
- Spread pizza dough evenly (as evenly as possible, flattened chunks will work) with brie.
- Drizzle/spread with half of the fig spread. Sprinkle evenly with shredded cheeses.
- Lay fig slices evenly across the flatbread. Drizzle/spread remaining half of the fig jam.
- Bake for 15 to 20 minutes minutes, until crust is golden and cheese is melted. Remove to a wire rack and let cool 2-3 minutes, until just cool enough to handle.
- Sprinkle with fresh thyme and ground black pepper. Slice up and enjoy!
Notes
For a touch of heat, swap a tablespoon or two of the classic fig spread with a little chili fig spread!
