Description

Impress your guests with this easy-to-make cheesy fig brie flatbread! With creamy brie and Italian cheeses, succulent figs, and a crispy flatbread base, this recipe is sure to be a crowd-pleaser.


Ingredients

  • 1 store-bought or homemade pizza dough
  • 8 ounces fresh mission figs, quartered/sliced and stems removed
  • 8 ounces brie, rind removed
  • 2 cups shredded Italian cheese blend
  • 1/2 cup shredded parmesan cheese
  • 1/3 cup fig spread, more as desired
  • 1 to 2 tablespoons extra virgin olive oil
  • Fresh thyme leaves
  • Fresh ground black pepper


Instructions

  1. Preheat oven to 425˚F. Roll pizza dough into a 12" by 15" -ish rectangle. Brush with olive oil and place on a baking sheet with parchment paper. 
  2. Spread pizza dough evenly (as evenly as possible, flattened chunks will work) with brie. 
  3. Drizzle/spread with half of the fig spread. Sprinkle evenly with shredded cheeses.
  4. Lay fig slices evenly across the flatbread. Drizzle/spread remaining half of the fig jam.
  5. Bake for 15 to 20 minutes minutes, until crust is golden and cheese is melted. Remove to a wire rack and let cool 2-3 minutes, until just cool enough to handle.
  6. Sprinkle with fresh thyme and ground black pepper. Slice up and enjoy!

Notes

For a touch of heat, swap a tablespoon or two of the classic fig spread with a little chili fig spread!
