Feeling fancy? This lavish cocktail is perfect for any and all special occasions. It's also super simple to make and even includes a homemade lavender simple syrup for a dash of floral flavor!

Ingredients

Units Scale

For the Cocktail

  • 2 ounces Empress 1908 Indigo Gin
  • 1/2 ounce freshly squeezed lemon juice
  • 1/4 ounce lavender simple syrup (more as desired for sweetness)
  • 1/2 teaspoon gold edible dust (more as desired for effect)
  • 3 ounces dry champagne, prosecco, or sparkling wine (I used Chandon Brut Sparkling)
  • Dash of lavender bitters
  • Optional: Gold sanding sugar, purple sanding sugar, white sugar, and a lemon slice for sugared rim garnish

For the Lavender Simple Syrup

Instructions

Make the Lavender Simple Syrup

  1. If using lavender baking buds : In a small pot, heat sugar and water to a boil, stirring frequently. Reduce to a simmer for 5 minutes. Remove from heat and add lavender baking buds . Let steep for 5 minutes. Strain the syrup to remove the buds. Chill until completely cooled.
  2. If using lavender extract: In a small pot, heat sugar, water, and lavender extract to a boil, stirring frequently. Reduce to a simmer for 5 minutes. Remove from heat and let steep for 5 minutes. Chill until completely cooled.

Make the Cocktail

  1. Optional sugared rim garnish: Pour a teaspoon each of white sugar, gold sanding sugar, and purple sanding sugar onto a small plate and spread to cover. Moisten the edge of your glass with the lemon wedge and dip into the sugar plate. Set aside.
  2. In a cocktail shaker with ice, combine indigo gin, lemon juice, lavender simple syrup, and gold edible glitter. Strain into sugar rimmed champagne flute or desired glass.
  3. Top with Champagne or sparkling wine and dash of lavender bitters.
  4. Add more lavender simple syrup to taste and/or more gold edible dust as desired for effect. Cheers!

Notes

The lavender simple syrup recipe makes about 1/2 cup of syrup. It can be stored in an airtight container in the refrigerator for up to 2 weeks.
