Fluffy, golden waffles packed with fresh raspberries and a little lemon zing. Perfect for Sunday brunch!

- 2 cups unbleached all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoons baking soda
- 3 tablespoons granulated sugar
- 1/2 teaspoon coarse salt
- 1 tablespoon lemon zest
- 2 cups buttermilk
- 1/3 cup unsalted butter, softened
- 1 egg yolk
- 3 egg whites
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh raspberries
- Powdered sugar, for dusting
Instructions
- Preheat a waffle iron. Prepare with cooking spray.
- In a large mixing bowl, combine flour, baking powder, baking soda, salt, sugar, and lemon zest together.
- In a small mixing bowl, whisk together egg yolk, buttermilk, vanilla extract, and softened butter together, until completely mixed.
- Pour the liquid mixture into the flour mixture, and stir until just combined.
- In a medium mixing bowl, whisk egg whites until they form stiff peaks. Gently fold into waffle mixture until just combined.
- Gently fold in fresh raspberries until just combined.
- Add about 1/4 to 1/3 cup to each section of your waffle maker. Bake in the waffle maker according to manufacture’s instructions (should take about 4-5 minutes to come out nice and browned.) Keep warm until ready to serve.
- Dust with powdered sugar and serve with a pat of butter and/or your favorite syrup!
