Description

Celebrate the best flavors of Autumn with fresh fall figs, thyme simple syrup, your favorite dry hard cider and a splash of gin!


Ingredients

Units Scale

For the Simple Syrup

  • 6-8 thyme sprigs
  • 1/2 cup granulated sugar
  • 1/2 cup water

For the Cocktail

  • 1/2 ounce thyme simple syrup (more as desired for sweeter cocktail)
  • 3 large mission black figs
  • 1 ounce gin (I used blue sapphire)
  • 2 ounces dry hard cider (I used Dry Cider from the Seattle Cider Company)
  • 1/2 ounce freshly squeezed lime juice
  • Club soda
  • Fig slices, thyme sprig for garnish


Instructions

  1. Make the Thyme Simple Syrup: In a small pot, heat sugar and water to a boil, stirring frequently. Reduce to a simmer for 5 minutes. Remove from heat and add thyme sprigs. Let steep for 5 minutes. Remove sprigs and strain the syrup to remove any loose leaves. Chill until completely cooled and ready to use.
  2. In a cocktail shaker, muddle together the gin, lime juice, thyme simple syrup, and figs. Make sure to smash the figs up really well!
  3. Strain into a glass over ice. Gently stir cider into the glass.
  4. Top with a splash of club soda.
  5. Garnish with a couple fresh fig slices and a small sprig of fresh thyme. Serve immediately.
