Easy, way better than store bought gluten free granola packed with quinoa, chia seeds, buckwheat groats, pumpkin seeds and healthy nuts.

- 3 cups rolled oats (gluten-free)
- 1 cup quinoa (I used white quinoa)
- 1 cup buckwheat groats*
- 1 teaspoon chia seeds
- 1/4 cup cocoa powder
- 1/2 teaspoon sea salt
- 1/2 cup walnuts, roughly chopped
- 1/2 cup sliced almonds, roughly chopped
- 1/4 cup pepitas
- 1/4 cup coconut oil
- 1/4 cup honey
- 1/4 cup maple syrup
- 1/4 cup molasses
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 300°F.
- In a large mixing bowl, stir together oats, cocoa powder, chia seeds, quinoa, buckwheat groats, walnuts, almonds, pepitas, and salt.
- Add vanilla extract, honey, molasses, maple syrup and coconut oil. Stir together until completely mixed.
- Spread the granola mixture onto a baking sheet.
- Bake for 40, minutes, stirring and rotating the pan after 20 minutes.
- Remove from oven, stir, and cool completely on a wire rack.
- Store in an airtight jar and enjoy with yogurt, milk, or just as a snack!
Notes
Although "buckwheat groats" sounds like it would contain gluten, it is not a grain. It's actually a seed and is considered more of a fruit! They are safe for a gluten free diet.
