Description

Easy, way better than store bought gluten free granola packed with quinoa, chia seeds, buckwheat groats, pumpkin seeds and healthy nuts.


Ingredients

  • 3 cups rolled oats (gluten-free)
  • 1 cup quinoa (I used white quinoa)
  • 1 cup buckwheat groats*
  • 1 teaspoon chia seeds
  • 1/4 cup cocoa powder
  • 1/2 teaspoon sea salt
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup sliced almonds, roughly chopped
  • 1/4 cup pepitas
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 300°F.
  2. In a large mixing bowl, stir together oats, cocoa powder, chia seeds, quinoa, buckwheat groats, walnuts, almonds, pepitas, and salt.
  3. Add vanilla extract, honey, molasses, maple syrup and coconut oil. Stir together until completely mixed.
  4. Spread the granola mixture onto a baking sheet.
  5. Bake for 40, minutes, stirring and rotating the pan after 20 minutes.
  6. Remove from oven, stir, and cool completely on a wire rack.
  7. Store in an airtight jar and enjoy with yogurt, milk, or just as a snack!

Notes

Although "buckwheat groats" sounds like it would contain gluten, it is not a grain. It's actually a seed and is considered more of a fruit! They are safe for a gluten free diet.
