- 1 large, red beet
- 1 banana, peeled
- 4 ounces frozen blackberries
- 4 ounces frozen strawberries
- 4 ounces frozen raspberries
- 1 large carrot, peeled, quarted, and roughly chopped
- 1 apple, cored, peeled and sliced
- 1 cup pineapple chunks
- 1 cup pineapple juice
- A splash to 1/4 cup of coconut milk, to sweeten
- 1 teaspoon chia seeds
Instructions
- Add beet to a small pot and cover with water with a pinch of salt. Bring to a boil over high heat and cook for 10 minutes. Remove from heat and run under cool water. Peel off easily removable skin and set aside. When cool enough to handle, cut into quarters.
- For easiest blending, add pineapple juice and coconut milk to the blender first. Then add the beet, apple, banana, pineapple and carrot. Top with the frozen berries.
- Blend until smooth. Top with extra chia seeds.
