Ingredients

  • 3 cups gluten-free old fashioned rolled oats
  • 1 cup whole almonds
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup brown sugar
  • 1/2 teaspoon kosher salt
  • 2 teaspoons pumpkin spice
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil


Instructions

  1. Preheat oven to 300°F.
  2. In a large mixing bowl, stir together oats, brown sugar, pumpkin spice, and salt.
  3. Add vanilla extract, honey, molasses, maple syrup and coconut oil. Stir together until completely mixed.
  4. Spread the granola mixture onto a baking sheet.
  5. Bake for 40, minutes, stirring and rotating the pan after 20 minutes.
  6. Remove from oven, add dried cranberries, stir, and cool completely on a wire rack.
  7. Store in an airtight jar and enjoy with yogurt, milk, or just as a snack!
