Happy Easter weekend! Anyone else looking forward to some serious eats this Sunday? Yes? Me too! I've got 10 tasty recipes coming right up to make your Easter dinner complete.
TBH, I'm having a bit of a moment here. It's all stormy outside, and I'm re-watching About Time AH-gain. I keep looking out the window at the crazy, blustery weather while wishing I could live by a beach in Cornwall like the family in this movie. About Time is one of those movies that always makes me smile and remember how precious everything is. The jist of it is the main character, Tim, discovers he can go back in time to any point of his life and relive it. It sounds cheesy but it definitely makes me appreciate all the wonderful things I have instead of lament all the things I think I need (slash want because lets be real, don't need most of those things
Lately, my husband and I have been thinking a lot about "the future". You know, home buying, having our own tiny humans, all that crazy stuff. I grew up in California (a stint in Florida during the single digits), and figured out as a teen I wanted to move to Seattle. I didn't make it here until after college but it's been more than a smidge frustrating to leave the INSANE housing market of California thinking "Whew! Maybe, even as a Millennial, I'll able to own a house someday!" only to land smack in the middle of the EXACT same thing occurring in Seattle's housing market.
Now, this is where About Time comes in. While watching this movie, I realized how incredibly extraordinary my little life is, to get to do what I do everyday. I get to cook for a living! I get to make beautiful food, and I get to live in this beautiful town with my favorite weather with my adorable hubby, playing video games and reading books in the evening with my fabulous fat cat. Tim actually says "I just try to live every day as if I've deliberately come back to this one day, to enjoy it, as if it was the full final day of my extraordinary, ordinary life". I just love that. To enjoy your one extraordinary, ordinary life. I think that's a mantra that we all need to live by, and not just the enjoy every day as if it was your last part. We all know that right? But to remember, even if you're life is ordinary, it's always special, always unique, and always extraordinary.
Now with that little snippit in mind, let's plan our Easter dinner and have a fantastic weekend!
