First week of February and I’m still going strong with the New Year’s Resolutions! Been hitting up my gym three times a week, mostly because I can have a mini spa day after the elliptical in the steam room and sauna but whatever works right??
However, this added exercise has caused a bit of an increase in the appetite department, mostly in the mornings. Which brings me to my super filling, healthy, and delicious Blueberry Power Smoothie!
Confession: I’ve been mostly going strong with the resolutions. After cooking delicious, healthy food all day I totally caved on Sunday night and found myself in the McDonalds drive through ordering a small fries and an Oreo McFlurry. In my defense, I had been craving a McFlurry for four days prior and had literally been dreaming of fries so it was unavoidable.
I find, if the craving lasts that long, it’s time to just accept your fate and go for it. Now, if I had had my Blueberry Power Smoothie in the morning like I was supposed to, my sweet tooth may have been cured for the day and the McFlurry situation could have possibly been avoided.

- 1/2 cup plain low-fat yogurt
- 1/2 cup low-fat milk
- 1/4 cup orange juice
- 1/2 cup old-fashioned rolled oats
- 1/2 cup baby spinach
- 2 medium oranges, peeled and pulled apart into segments
- 1 large banana, sliced
- 2 cups frozen blueberries
- In a blender, pour in the low-fat milk, orange juice and plain low-fat yogurt. Add the oats, spinach, orange segments and banana slices. Add the frozen blueberries on top.
- Blend on high for 1-2 minutes until mixture is smooth.
- Pour into glasses and enjoy chilled.
Make the night before for an easy on-the-go breakfast or after morning gym snack! Pour the smoothie into mason jars and seal with lids, placing in the fridge overnight.
