For the Bread

  • 1 3/4 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon all spice
  • 1/2 cup unsalted butter
  • 2/3 cup white sugar
  • 2 eggs
  • 1/4 cup applesauce
  • 1/3 cup milk
  • 1 teaspoon vanilla extract

For the Apples

  • 2 cups apples, diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup walnuts, roughly chopped


Instructions

  1. Preheat oven to 350˚F. Grease a 9X5 inch loaf pan.
  2. Mix together ingredients for apples in a small bowl. Set aside.
  3. In a large mixing bowl, combine flour, salt, baking soda, baking powder, cinnamon, nutmeg, and all spice.
  4. In another mixing bowl, cream together butter and sugar. Whisk in egg, vanilla extract, applesauce and milk. Stir in apple and walnut mixture.
  5. Add the wet mixture to the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared loaf pan. Top with a few leftover walnuts.
  7. Bake for 50 minutes until a toothpick inserted into the middle of the loaf comes out clean.
  8. Cool for 5 minutes. Turn loaf out onto a wire rack and cool for another 5 minutes.
