So it's been a while. A while since I shared a smoothie with you. Granted, I seem to make a lot of smoothies. But they're so easy! And healthy! And delicious! So why not right? I needed a smoothie with a little more "oomph" though, a little more gusto. Preferably even healthier than my Green Superfood Coconut Smoothie or even my Energy Burst Healthy Morning Smoothie. In order to do so, I had to ask myself, how can I hide veggies in a smoothie and still make it taste sweet without a ton of added sugar?....The Healthy Fruity Beet Smoothie!
So first things first. I LOVE the color of this smoothie. How could you not??? ❤️❤️ It's magenta. So few foods have such a vibrant, delectable color and it's all thanks to one single, cooked beet. I even added a splash of coconut milk to the mix to take any veggie or "earthy" taste down a notch, and it didn't change the color at all! By the way, the coconut milk added the perfect amount of "sweet" without using any extra sugar or dairy.
Another awesome thing about this Healthy Fruity Beet Smoothie is how it's chock full of nutrients. It even has a carrot in it! Plus an apple, banana, pineapple juice, a ton of berries, and chai seeds. Everything you need for the perfect health boost! Beets are ridiculously good for you but I find it hard to incorporate them into my diet. I do have a Winter Kale Beet Salad featuring (yup) beets but I can only eat it every so often. To really keep beets around, I needed something a little easier and voila! This smoothie is quickly becoming a staple in my weekly breakfasts.
PS. It's even vegan. I do usually put some plain yogurt in my smoothies but this one is so thick and delicious you don't even need it! Win win!

Ingredients
- 1 large, red beet
- 1 banana, peeled
- 4 ounces frozen blackberries
- 4 ounces frozen strawberries
- 4 ounces frozen raspberries
- 1 large carrot, peeled, quarted, and roughly chopped
- 1 apple, cored, peeled and sliced
- 1 cup pineapple chunks
- 1 cup pineapple juice
- A splash to ¼ cup of coconut milk, to sweeten
- 1 teaspoon chia seeds
Instructions
- Add beet to a small pot and cover with water with a pinch of salt. Bring to a boil over high heat and cook for 10 minutes. Remove from heat and run under cool water. Peel off easily removable skin and set aside. When cool enough to handle, cut into quarters.
- For easiest blending, add pineapple juice and coconut milk to the blender first. Then add the beet, apple, banana, pineapple and carrot. Top with the frozen berries.
- Blend until smooth. Top with extra chia seeds.
